Sfogliando la rivista"News" dell'Esselunga si trovano sempre idee veloci e sfiziose.
Questo chutney è una di quelle, che ho provato anche con la variante delle mele al posto del mango (... lo sentivo più rustico e patriottico ... ), ma sinceramente fra i due non saprei quale scegliere. Si sposa bene con la carne e i formaggi. Non ho ancora provato ma credo che invasato, ricoperto di olio e pastorizzato potrebbe essere un'ottima idea regalo gourmet!
Ingredienti:
2 cipolle bianche o dorate tagliate a fettine
2 mango a fettine
2 cucchiai di zucchero di canna
2 cucchiai di aceto
un cucchiaio di curry
50 g di burro
olio extavergine di oliva
timo fresco
- Dorare leggermente le cipolle in padella con un cucchiao di olio.
- Unire il burro, il mango, il timo, il curry, lo zucchero e l'aceto, far insaporire e cuocere coperto a fuoco basso per 20/30 minuti.
- Guarnire con altro timo fresco e servire con arrosti o carne alla brace oppure con formaggi stagionati.

This chutney is one of those, I prevously tested using apples instead of mango (... I felt more rustic and patriotic ...), but honestly I really would not know which one to choose between the two! It marries well with meat and cheese. I have not tried yet but I think it could be preserved in jars, covered with oil and pasteurized: it could be a great gourmet gift idea!

You need:
2 white or golden onions, sliced
2 sliced mango
2 tablespoons brown sugar
2 tablespoons vinegar
a teaspoon curry
50 g butter
extavergine olive oil
fresh thyme
- In pan slightly fry onions with a tablespoon of oil.
- Combine the butter, mango, thyme, curry, sugar and vinegar, amalgamate and cook covered over low heat for 20/30 minutes.
- Garnish with more fresh thyme and serve with roasted or grilled meats, or with cheese.

I made my very first chutney just the other day (cranberry apple) and I am hooked. Mangoes are my favorite fruit so this would definitely be perfect for me. I bet it would be great with some roast pork!
