I Puoti


Da metà novembre e fino a Natale presso il centro Plurimix di Verona (recentemente trasferitosi in centro in Via Anfiteatro, 6a, un luogo da perderci la testa e ... il portafoglio!) ogni lunedì pomeriggio si svolgono delle dimostrazioni gratuite per idee golose e decorative per le feste. Quando posso ci faccio un salto veloce, anche per salutare Paola (conosciuta ai corsi alle Tamerici) che gentilmente offre la sua "mano d'opera" ed illustra le varie ricette. Quella che segue mi premeva molto, perchè, anche se la mia infanzia è trascorsa in terra milanese, sono veronese di nascita, ed ora anche di residenza; inoltre la tradizione di questo dolcetto è molto tenera e coccolosa.
"Puoti" in dialetto veneto vuol dire bambolotti. Una volta S. Lucia, che da noi porta i regali ai bambini la notte tra il 12 e il 13 dicembre, era molto parca, anche perchè la maggior parte delle famiglie erano meno abbienti e poco si potevano permettere. Tradizione voleva che S. Lucia portasse frutta in dono, specialmente agrumi (preziosi per le loro vitamine ma poco abbordabili economicamente) e questi biscotti dalla forma di bambolotti, che accontetavano tutti quei piccolini che non potevano permettersi vere bambole, o ne possedevano solo dei piccoli modelli in pezza. In effetti questi biscotti sono cicciottelli e un pochino goffi, come proprio sono le bambole in pezza.

Ingredienti:

500 g farina
200 g zucchero
100 g strutto *
2 uova
la buccia grattugiata di un limone
8 g cremor tartaro **
4 g bicarbonato **
mezzo cucchiaino vaniglia liquida
un pochino di latte
un goccino di grappa, facoltativo (io l'ho messo)

* l'uso dello strutto è proprio una caratteristica dei tempi andati, dove il maiale era di casa e del quale nulla si buttava; lo strutto veniva usato regolarmente in cucina (e senza i sensi di colpa di oggi!)
** oppure 1 bustina lievito x dolci

- Impastare tutti gli ingredienti insieme, anche nel robot, aggiungendo il latte a filo se necessario, per avere una bella frolla soda e non appiccicosa.
- Prendere due pezzetti e formare due rotolini di circa 25 cm. Metterli su carta forno o sdirettamente ulla teglia antiaderente da biscotti (questa dell'Ikea, appena presa, è favolosa!). Sovrapporre un rotolino all'altro e rigirarlo una o due volte, come per fare una treccia. Abbassare i due rotolini in alto per formare le braccia. Con un pochino di pasta formare una pallina per la testa ed unirla al corpo. Oppure fare un unico bigolo cicciottello, tagliare la parte finale superiore a metà per fare le braccia, e la parte inferiore per fare le gambe.
- Decorare a piacere con confettini colorati prima di infornarli, un po' di albume sbattuto farà da collante (con glassa bianca/colorata/cioccolata una volta sfornati e raffreddati).
- Infornare a 180° per 15/20 minuti a seconda della grandezza.

There is a nice shop in Verona, Plurimix (a place to fulfill your eyes and hands ... but empty our wallet!) where free demonstrations of delicious and decorative festive ideas are held on Monday afternoons . When I can I drop there, my friend Paola kindly offers her time to set out the recipes.
I was very attracted by the following cookies, because, even though I spent my childhood in Milan, I was born in Verona, and got back to Garda Lake (25 km from Verona, where now I live with my family) 35 years ago. Plus, the tradition of this trick is very sweet and cuddly.
"Puoti" is the Venetian dialect name for dolls. Some time ago St. Lucia, who brings presents to children on the night between 12th and 13th December in some regions of Italy, was very frugal, also because most families were poor and could hardly afford any presents. So St. Lucia used to bring fruit as a gift, especially citrus fruits (so precious in wintertime for their vitamins but still not economically affordable) and these doll-shaped cookies, giving happiness to all those children who could not afford real dolls, or had only rag small ones. In fact, these cookies are a little chubby and awkward, just like rag dolls are.
It will be real fun to spend some time with your children to bake and decorate puoti!

puoto fiocco argento

You need:

500 g flour
200 g sugar
100 g lard *
2 eggs
grated rind of one lemon
8 g cream of tartar **
4 g baking soda **
half teaspoon liquid vanilla
a little milk
a little grappa, optional (I put it)

* lard was very used in cooking once ago when every family had a pig and did use everything of it
** or 2 teaspoons baking powder

- Mix all ingredients together, even in your kneader, adding milk little by little if necessary to have a pretty firm and not sticky pastry.
- Take two pieces and form two rolls of about 25 cm. Place them on baking paper or directly on a non-stick baking pan. Place a roll onto another one and turn it once or twice, as making a braid. Lower the two upper rolls to form arms. With a little bit of dough shape a ball for the head and place it. or else, you can shape a fattier roll, cut the upper part in two fr the arms, and the lower part for the legs.
- Decorate with colored confetti as you like, a little beaten white of egg will be your glue (white or colored royal icing/chocolate only when cool).
- Bake at 180° for 15/20 minutes, depending on size.

They are so cute. In Switerland we make Grittibänze for December 6. They look similir but are made with yeasted dough.
