Vellutata di piselli e menta - MLLA 23

MLLA (My legume Love Affair) di Susan è un appuntamento mensile che raccoglie idee e ricette nuove a base di legumi. Questo mese è propiro lei in persona, la fondatrice, ad ospitarci nella sua cucina. E cosa ancora più gradita, metterà in palio ben due libri tra le partecipanti:
Miss Masala - Real Indian Cooking for Busy Living e Quick Indian Cooking. Non sarebbe bello poterne vincere uno? ... ultimamente mi sto dando golosamente alla cucina indiana ... sì, lo so, sono in ritardo tremendo, ma tra poco sarò tranquilla al mare e allora potrò postare la cena indiana che abbiamo organizzato tra amiche ... vestiti compresi!

Questa di oggi è una ricettina semplice (dalla rivista "A Tavola") ma molto rinfrescante, allegra e festosa nel suo bel verde acceso, che potrà essere gustata sia calda che fredda, e che io vedo bene anche in monoporzione per languide cene estive tra amici al calar della sera ... e perchè no, anche per gli indiavolati che se ne staranno ore davanti alla TV a seguire i mondiali di calcio ... tra una patatina e l'altra un sorso di vellutata rinfrescante ci sta bene!

Per 4 persone:

400 g di piselli surgelati
200 g di brodo vegetale o di pollo (oppure fatto con dado casalingo)
1 cucchiaio di cipollotto fresco tritato
foglie di menta
1 yogurt magro, 125 g.
150 g di latte
sale/pepe
un paio di cucchiai di mascarpone o panna acida
(io preferisco quest'ultima)

- Cuocere i piselli nel brodo per circa mezzora o finchè teneri.
- Con un frullatore a immersione, ridurre a purea aggiungendo anche lo yogurt, il latte, qualche fogliolina di menta e il cipollotto tritato. Salare e pepare.
- Versare nelle coppette e decorare con un cucchiaino di mascarpone o panna acida e un ciuffettino di menta.

Mint and Peas Velouté

And more, she will be raffling two books among the participants: Miss Masala - Real Indian Cooking for Busy Living and Quick Indian Cooking.
Wouldn't it be nice (and real luck!) to win one? ... I am very fond of Indian cuisine ... and I know I'm terribly late in posting, but soon I will blog about the lovely Indian dinner we dear friends had together last month ... typical dresses included!
Today's recipe is very simple but very refreshing, cheerful and joyful in its beautiful bright green, to enjoy both warm and cold. I suppose it goes very well served in mini single-portion in a buffet or in relaxing summer dinners with friends ... and why not, for the biggest football fans that will stay hours watching TV to follow the World Cup ... not only chips and fries ... but a smooth refreshing sip of this velouté will be ok!

Serving 4:

400 g frozen peas
200 g of vegetable or chicken broth (homemade or made with nut)
1 tablespoon chopped spring onion
mint leaves
1 low-fat yogurt, 125 grams
150 g milk
salt/pepper
a couple of tablespoons of mascarpone cheese or sour cream
(I prefer sour cream)

- Cook the peas in the broth for about half an hour or until tender.
- With a hand blender, mix peas with yogurt, milk, a few mint leaves and chopped spring onion. Season with salt and pepper.
- Pour into bowls and garnish with a spoonful of mascarpone cheese or sour cream and a mint leaf.

May DB Challenge - Croquembouche o Pièce Montée

La padrona di casa dell sfida delle Daring Bakers di questo mese è Cat di
Little Miss Cupcake; la ricetta da lei scelta è il Croquembouche, o Pièce montée, o semplicemente cascata di profiteroles basata sulle ricette di Peter Kump’s Baking School a Manhattan e Nick Malgieri.

Da Wikipedia: il croquembouche è un tipico dolce francese, formato da una "montagna" di bignè, la cui altezza può variare dei 20 cm a anche 1 m. I bignè sono preparati con pasta Choux e possono essere riempiti con panna, crem pasticcera o crema chantilly. Per tenere insieme la montana di bigné si utilizza del caramello caldo come "collante" che indurendosi tiene insieme l'intera struttura. La sua caratteristica è che al palato risulta prima croccante e successivamente morbida da ciò deriva anche il suo nome. Infatti in lingua francese il termine "Croque en bouche" può essere tradotto come "croccante in bocca" e in effetti il morbido bigné scrocchia in bocca con la sua glassa croccante al caramello. Il croquembouche puo essere decorato in vari modi ma quello tradizionale è formato da un sottile velo di caramello filato che avvolge l'intero dolce. Il caramello viene filato utilizzando una forchetta e disegnando dei fili su una carta oleata che poi verranno presi e adagiati sul dolce o alternativamente il caramello viene direttamente schizzato sul croquembouche. Per la sua complessità, questo dolce è usato solitamente in matrimoni, cene natalizie o in occasioni particolari.
Questa ricetta ha 3 componenti principali: la pasta per i bigné, la crema pasticcera, e la glassa usata per il montaggio e le decorazioni. Si può acquistare o fare una struttura conica di cartone per costruire la piramide oppure si possono usare gli stuzzicadenti come aiuto, anche se per preparazioni non troppo alte è relativamente facile usanre soloi bignè e la glassa come colla.
Ci vuole solo un po' di tempo per assemblare le varie componenti, che non richiedono alcun ingrediente speciale per la loro preparazione. E una volta presa la mano, sarà una gioia poter esprimere la propria creatività ogni volta in un modo doverso e preparare cascate di profiteroles per ogni occasione.

Ho eseguito la ricetta in un solo pomeriggio, aiutata da una nuorina compiacente e diligente, mandando via a gran fatica mani che si allungavano per rubare i bignè o assaggiare le creme. E poi mi veniva da ridere perch
è ogni ragazzo che passava dalla cucina, vedendoci così prese ed impegnate, ingenuamente domandava: ma cosa si festeggia oggi? di chi è il compleanno?Avevo già fatto i bignè in precedenza, quindi non ho trovato difficoltà nell'eseguire la ricetta. Mi ha fatto dannare il caramello, non sono brava con le decorazioni e soprattutto non avevo tempo (chissà perchè mi riduco sempre all'ultima ora ... ma con la fine delle scuole gli impegni sono così tanti che il calendario in testa proprio non entra più!), ho giusto fatto una stellina di ripiego. Ma in queste mesi estivi prenderò lezioni, ho già adocchiata una maestra bravissima, e mi eserciterò a dovere!

La ricetta fornisce 3 varianti di crema pasticcera: vaniglia, caffè e cioccolato, ma ogni possibile gusto può essere realizzato e reso personale. È possibile utilizzare una glassa di cioccolato o di caramello o anche entrambe (seguono le ricette).
Tempo di preparazione: l'impasto per i bigné va utilizzato subito, così come la glassa al cioccolato o al caramello. Però la glassa che fa da collante ha bisogno di qualche ora per indurire. La crema pasticcera può essere fatta un paio di giorni in anticipo e conservata in frigorifero fino al momento dell'uso. Avrete bisogno di circa 10 minuti per preparare la pasta sfoglia, 10 minuti per formare i bigné e circa 30 minuti per cuocerli. Si possono conservare un giorno in una scatola ermetica. Per la crema pasticcera occorrono circa 10 minuti più almeno 6 ore o tutta la notte per raffreddarla. le glasse sono pronte in circa 10 minuti.


Attrezzatura necessaria:

• teglie diverse
• carta da forno
• una frusta
• un pennello da cucina
• una tasca da pasticcere e un paio di punte (tonda semplice per fare i bigné e piccola per la crema)
• una superficie piana o un'alzatina su cui montare la piramide
• decorazkioni perla piramide: nastri, confetti, fiori freschi, granella di zucchero, biscottini, cioccolatini, ecc.


Per la crema pasticcera alla vaniglia:

225 ml. latte intero
2 cucchiai di maizena
6 cucchiai (100 g.) di zucchero
1 uovo grande
2 tuorli grandi
2 cucchiai (30 g.) di burro non salato
1 cucchiaino di vaniglia

Sciogliere la maizena in ¼ tazza di latte. Unire il resto del latte con lo zucchero in un pentolino, portare ad ebollizione, togliere dal fuoco.
Sbattere le uova intere nsieme ai tuorli e unirle al composto di maizena. Versare 1/3 del latte bollente nella miscela di uova, sbattere costantemente in modo che le uova non inizino a cucinare.
Bollire ancora il resto del latte e poi versarlo a filo sul composto di uova, sbattendo continuamente con la frusta di continuare. Continuare a mescolare con la frusta (ed è importante perchè le uova non devono cuocere) fino a quando la crema arriva a bollore. Togliere dal fuoco e aggiungere burro e vaniglia.
Versare la crema in una ciotola di ceramica o acciaio inossidabile e raffreddarla mescolando. Quindi coprirla con la pellicola premendola con fermezza contro la superficie. Conservare in frigo fino al momento dell'uso.


Per la crema pasticcera al cioccolato:

Portare ¼ tazza (circa 50 cl.) di latte ad ebollizione in un pentolino, togliere dal fuoco e aggiungere circa 80 gr. di cioccolato fondente tritato e mescolare finchè ben sciolto e la crema sarà liscia. Aggiungere alla crema pasticcera quando si mette il burro e la vaniglia.
Per la Crema Pasticcera al Caffè:
Sciogliere 1 cucchiaino e mezzo di caffè istantaneo in 1 cucchiaino e mezzo di acqua bollente. Unire alla crema pasticcera con il burro e la vaniglia.


Impasto per bigné (circa 28):

175 ml. di acqua
85 g. di burro non salato
un pizzico di sale
1 cucchiaio di zucchero
125 gr di farina
4 uova grandi dimensioni
1 uovo e un pizzico di sale per pennellare

Preriscaldare il forno a 220°. Foderare due teglie con carta forno.

- Unire acqua, burro, sale e zucchero in una casseruola a fuoco medio. Portare a bollore e mescolare di tanto in tanto. Al bollore, togliere dal fuoco e unire la farina setacciata, mescolando. Rimettere sul fuoco e cuocere, mescolando costantemente fino a quando la pastella si asciuga leggermente e inizia a staccarsi dalle pareti della pentola.
- Trasferire in una ciotola e mescolare con un cucchiaio di legno per raffreddarla.
Aggiungere un uovo. Mescolare con delicatezza inizialmente e poi con più fermezza per farlo assorbire bene dall'impasto. Si aggiungerà l'uovo successivo quando il precedente sarà stato completamente assorbito e l'impasto non risulterà umido in superficie. Proseguire per tutte le uova.

- Trasferire la pastella in una sacca da pasticceria con punta grande tonda (oppure direttamente dalla sacca tagliando in sbieco la parte finale). Spremere e formare i bigné, circa 3cm. alti e 3cm. larghi. Usando un dito pulito immerso in acqua calda, premere delicatamente verso il basso le punte che si formano sulla parte superiore dei bigné, per mantenere la loro forma a sfera. Pennellare delicatamente con l'uovo sbattuto con un pizzico di sale.

- Cuocere i bigné a 220° per circa 10 minuti, si gonfieranno e tenderanno a dorarsi. Abbassare la temperatura a 180° continuando la cottura fino a quando saranno ben dorati e asciutti, circa 20 minuti. Raffreddare su una griglia. Possono essere conservati in una scatola ermetica durante la notte.

- Riempire i bigné con la crema pasticcera utilizzando la siringa apposita con punta fina. Sistemarli su una teglia e conservarli brevemente in frigo mentre si prepara la glassa.


Glassa al cioccolato:

200 g. di cioccolato tritato di prima qualità semidolce

Sciogliere il cioccolato a bagnomaria o nel microonde. Mescolare ad intervalli regolari per evitare che si bruci. Utilizzare immediatamente.


Glassa al caramello:

225 gr di zucchero
½ cucchiaino di succo di limone

Unire lo zucchero e il succo di limone in una casseruola e mescolare con un cucchiaio da cucina in metallo finché lo zucchero non somiglia sabbia bagnata. Mettere a fuoco medio, senza mescolare fino a quando lo zucchero inizia a sciogliersi intorno ai lati della padella e il centro inizia a fumare. Iniziare allora a mescolare lo zucchero. Continuare a cuocere, mescolando di tanto in tanto fino a quando lo zucchero è di un bel colore ambrato. Togliere dal fuoco immediatamente, si può appoggiare la pentola su acqua ghiacciata per fermare la cottura. Utilizzare immediatamente.


Assemblaggio della piramide di bigné


Per avere un'idea di come potrebbe essere il risultato finale, sarebbe opportuno fare delle prove con i bigné vuoti. Ci si può aiutare con un disegno a matita sulla carta forno, sarà più facile poi seguirlo.
Una volta pronti per assemblare il dolce, immergere la parte superiore di ogni bigné nella glassa (attenzione al caramello, potrebbe essere ancora caldo!)e iniziare il montaggio. La glassa farà anche da collante per tenerli uniti, ma si possono usare degli stuzzicadenti come aiuto, come riportato nei video che seguono.
Una volta terminata la piramide, si può decorare con la restante glassa o con l'utilizzo di nastri, granella di zucchero, confetti, fiori, ecc.

May DB Challenge - Croquembouche or Pièce Montée

The May 2010 Daring Bakers’ challenge was hosted by Cat of
Little Miss Cupcake. Cat challenged everyone to make a piece montée, or croquembouche, based on recipes from Peter Kump’s Baking School in Manhattan and Nick Malgieri.

It was a very nice challenge, I did pate a choux before and I was used to it.
But I realized very late it was already time to post about the challenge and I did everything on 27th, in the afternoon. One of my daughter-in-law helped me and I really needed a hand, it was late and we did not have much time!
All my boys coming in and out the kitchen and seeing us so busy with such wonderful and delicious things, were asking why and who for was the cake, wondering which birthday was in calendar, trying to grab something to taste and making me scream all the time to run away quichly from the kitchen or I would have beaten their bottom with a wooden spoon!
And finally we did it! Pictures are not the best but it was late, sunset time and light not so bright ... but our pièce montée was very, very, very good indeed!
I used chocolate pastry cream for filling, chocolate glaze to assemble and on top of pate à choux and granulated sugar to garnish ... I would have liked to garnish the pièce montée with caramel but I didn't feel very comfortable with it, was in a hurry and did not have time enough to get confident, just able to shape a little star ... but that will be my summer homework, practicing with caramel decorations!
I would have liked to garnish with rose blossoms but a terrible storm in the afternoon spoiled most all flowers, just gathered some pale pink petals of my ClairMatin and a few red roses.

Preparation time: You will want to use your puff pastry batter and chocolate glaze or caramel as soon as it has been prepared and as close to serving time as possible. This is not a dessert that stores well and it may be a bit temperamental in humid areas as the glaze needs to harden to hold the choux together. The crème patissiere can be made a couple of days in advance and stored in the fridge until ready to use.
You will need approximately 10 minutes to prepare the puff pastry, 10 minutes to pipe and about 30 minutes to bake each batch. The crème patissiere should take about 10 minutes to cook and then will need to be cooled for at least 6 hours or overnight. The glazes take about 10 minutes to prepare.


Equipment required:
 
• several baking sheets
• parchment paper
• a whisk
• a pastry brush (for the egg wash)
• a pastry bag and tip (a plain tip or no tip is best for piping the puff pastry; you can use a plain or star tip to fill the puff pastry with the cream)
• a flat surface such as a baking sheet or cake board/stand on which to assemble your piece montée
• some of the items you may want to use to decorate your piece montée include ribbons, Jordan almonds, fresh flowers, sugar cookie cut-outs, chocolates, etc.

Ingredients:

For the Vanilla Crème Patissiere (Half Batch)
 
1 cup (225 ml.) whole milk
2 Tbsp. cornstarch
6 Tbsp. (100 g.) sugar
1 large egg
2 large egg yolks
2 Tbsp. (30 g.) unsalted butter
1 Tsp. Vanilla

Dissolve cornstarch in ¼ cup of milk. Combine the remaining milk with the sugar in a saucepan; bring to boil; remove from heat.
Beat the whole egg, then the yolks into the cornstarch mixture. Pour 1/3 of boiling milk into the egg mixture, whisking constantly so that the eggs do not begin to cook.
Return the remaining milk to boil. Pour in the hot egg mixture in a stream, continuing whisking.
Continue whisking (this is important – you do not want the eggs to solidify/cook) until the cream thickens and comes to a boil. Remove from heat and beat in the butter and vanilla.
Pour cream into a stainless steel/ceramic bowl. Press plastic wrap firmly against the surface. Chill immediately and until ready to use.

For Chocolate Pastry Cream (Half Batch Recipe):
 
Bring ¼ cup (about 50 cl.) milk to a boil in a small pan; remove from heat and add in 3 ounces (about 80 g.) semisweet chocolate, finely chopped, and mix until smooth. Whisk into pastry cream when you add the butter and vanilla.

For Coffee Pastry Cream (Half Batch recipe)
 
Dissolve 1 ½ teaspoons instant espresso powder in 1 ½ teaspoons boiling water. Whisk into pastry cream with butter and vanilla.

Pate a Choux (Yield: About 28)
 
¾ cup (175 ml.) water
6 Tbsp. (85 g.) unsalted butter
¼ Tsp. salt
1 Tbsp. sugar
1 cup (125 g.) all-purpose flour
4 large eggs
For Egg Wash: 1 egg and pinch of salt

Pre-heat oven to 425◦F/220◦C degrees. Line two baking sheets with parchment paper.

Preparing batter:
 
Combine water, butter, salt and sugar in a saucepan over medium heat. Bring to a boil and stir occasionally. At boil, remove from heat and sift in the flour, stirring to combine completely.
Return to heat and cook, stirring constantly until the batter dries slightly and begins to pull away from the sides of the pan.
Transfer to a bowl and stir with a wooden spoon 1 minute to cool slightly.
Add 1 egg. The batter will appear loose and shiny. As you stir, the batter will become dry-looking like lightly buttered mashed potatoes.
It is at this point that you will add in the next egg. Repeat until you have incorporated all the eggs.

Piping:
 
Transfer batter to a pastry bag fitted with a large open tip (I piped directly from the bag opening without a tip). Pipe choux about 1 inch-part in the baking sheets. Choux should be about 1 inch high about 1 inch wide.
Using a clean finger dipped in hot water, gently press down on any tips that have formed on the top of choux when piping. You want them to retain their ball shape, but be smoothly curved on top. Brush tops with egg wash (1 egg lightly beaten with pinch of salt).

Baking:
 
Bake the choux at 425◦F/220◦C degrees until well-puffed and turning lightly golden in color, about 10 minutes.
Lower the temperature to 350◦F/180◦C degrees and continue baking until well-colored and dry, about 20 minutes more. Remove to a rack and cool. Can be stored in a airtight box overnight.
Filling:

When you are ready to assemble your piece montée, using a plain pastry tip, pierce the bottom of each choux. Fill the choux with pastry cream using either the same tip or a star tip, and place on a paper-lined sheet. Choux can be refrigerated briefly at this point while you make your glaze.
Use one of these to top your choux and assemble your piece montée.

Chocolate Glaze:
 
8 ounces/200 g. finely chopped chocolate (use the finest quality you can afford as the taste will be quite pronounced; I recommend semi-sweet)

Melt chocolate in microwave or double boiler. Stir at regular intervals to avoid burning. Use the best quality chocolate you can afford. Use immediately.


Hard Caramel Glaze:
 
1 cup (225 g.) sugar
½ teaspoon lemon juice

Combine sugar and lemon juice in a saucepan with a metal kitchen spoon stirring until the sugar resembles wet sand. Place on medium heat; heat without stirring until sugar starts to melt around the sides of the pan and the center begins to smoke. Begin to stir sugar. Continue heating, stirring occasionally until the sugar is a clear, amber color. Remove from heat immediately; place bottom of pan in ice water to stop the cooking. Use immediately.


Assembly of your Piece Montée
 
You may want to lay out your unfilled, unglazed choux in a practice design to get a feel for how to assemble the final dessert. For example, if making a conical shape, trace a circle (no bigger than 8 inches) on a piece of parchment to use as a pattern. Then take some of the larger choux and assemble them in the circle for the bottom layer. Practice seeing which pieces fit together best.
Once you are ready to assemble your piece montée, dip the top of each choux in your glaze (careful it may be still hot!), and start assembling on your cake board/plate/sheet. Continue dipping and adding choux in levels using the glaze to hold them together as you build up. (You may want to use toothpicks to hold them in place – see video below).

When you have finished the design of your piece montée, you may drizzle with remaining glaze or use ribbons, sugar cookie cut-outs, almonds, flowers, etc. to decorate. Have fun and enjoy! Bon appétit!

Arrosto di pesce con pure' di piselli - WHB # 235


Dal corso "Buffet per piccole cerimonie" di Gianfranco, ecco il piatto che mi ha più affascinato: un secondo di pesce che si può tranquillamente preparare in anticipo e che mette allegria coi suoi bei colori primaverili. Si può anche fare con un filetto di pesce bianco, e riservare il rosa del salmone per la farcia.

Per 8/12 persone:

1 filetto di salmone di circa 1,3 kg. *
150 g di polpa di branzino **
1 cucchiaio di capperi piccoli sott'olio
1 carota
1 zucchina
1 costa di sedano
una manciata di spinacini freschi ***
olio extravergine di oliva
sale/pepe
timo o basilico fresco

* all'Esselunga si trovano dei filetti già pronti, bisogna solo togliere la pelle ma con un coltello affilato si riesce anche a fare da soli, altrimenti chiedere gentilmente in pescheria se lo sfilettano accuratamente loro
** era finito il branzino, ho messo merluzzo
*** si possono usare delle foglie di spinaci, erbette o bietole, lessate velocemente, raffreddate in acqua fredda e tamponate con carta cucina

- Eliminare la pelle e le lische dal filetto, tagliare capo e coda per renderlo più rettangolare possibile (tenere gli avanzi per la farcia), inciderlo a metà e aprirlo a libro, coprire con carta forno e appiattirlo leggermente col batticarne.
- Tagliare le verdure a cubetti e rosolarle in un filo di olio, unire gli scarti del salmone a pezzettini, salare e pepare, unire i capperi e qualche foglia di basilico o timo spezzettata.
- Frullare la polpa di pesce bianco e unirla alla farcia.
- Appoggiare il filetto su carta forno, salare leggermente, coprire con le foglie di spinacino, sistemare la farcia nel mezzo e arrotolare, aiutandosi con il lembo della carta forno.
- Sigillare bene il rotolo con pellicola, trasferire su un vassoio e lasciare riposare in frigo qualche ora, anche tutta la notte.
- Eliminare la pellicola, aprire la carta forno, tagliare il salmone crudo a tranci, trasferire il rotolo tagliato con la carta forno sulla teglia, insaporire con un filo di olio e infornare a 180° per 15/20 minuti.

Pure' di piselli:

800 g di piselli congelati
800 g di brodo vegetale (in alternativa anche fatto col dado casalingo)
20 g di burro
sale/pepe

Lessare i piselli nel brodo fin quando saranno morbidi, scolarli e frullarli con la noce di burro (se necessario aggiungere un pochino del brodo di cottura). Salare e pepare.

Roasted Salmon with Mashed Peas

A light dish offering delicate pastel colors.
Can be prepared in advance and will be ideal for special family cerimonies.

Serving 8/12:

1 salmon fillet about 1.3 kg.
150 g European seabass *
1 tablespoon small capers in oil
1 carrot
1 zucchini
1 celery stalk
a handful of fresh tender spinach **
extra virgin olive oil
salt/pepper
fresh thyme or basil

* the bass was finished, I put cod
** you can use the big leaves of any kind of green vegetable, boil quickly and immediately cool in cold water and dab with kitchen paper

- Remove skin and bones from the fillet, cut head and tail to make it as rectangular as possible (keep the leftovers for stuffing), cut in half and open like a book, cover with parchment paper and flatten slightly with meat mallet.
- Cut vegetables into cubes and fry in a little oil, add scraps of salmon cut into small pieces, salt and pepper, add the capers and some chopped basil leaves or thyme.
- Blend the flesh of white fish and combine with the stuffing.
- Place the fillet on baking paper, salt lightly, cover with green leaves, place the stuffing in the middle and roll up, helping with parchment paper.
- Seal the roll with plastic film, transfer to a baking tray and let stand in refrigerator for some hours, even overnight.
- Remove the plastic film, open the paper, slice raw salmon, transfer the roll with parchment paper on baking tray, season with a little oil and bake at 180° for 15/20 minutes.

Mashed Peas:

800 g frozen peas
800 g vegetable stock (or also made with homemade stock cubes)
20 g butter
salt/pepper

Boil peas in broth until they are soft, drain and blend with the butter (if necessary add a bit of broth). Season with salt and pepper.

Un'idea insolita di Matia Barciulli, chef dell'"Osteria di Passignano", per preparare la più classica panzanella: tostare il pane in pentola con un filo di olio, per dare una nota più decisa sotto i denti.
Per quest'occasione io l'ho fatta semplice, ma la sua ricetta originale prevede anche l'aggiunta di calamaretti lessati velocemente in acqua acidulata.
Come decorazione ho usato delle mazzancolle tropicali in offerta per limitare il budget della raccolta di Giulia "Menu a 15 euro", ma sicuramente un bel gamberone come da ricetta originale la renderà più preziosa.

Ingredienti per 4 persone:

200 g pane toscano raffermo
1 cetriolo
200 g pomodorini ciliegini
80 g calamaretti
2 coste di sedano
mezza cipolla dorata o rossa, a piacere
8 gamberoni
aceto bianco
un cucchiaio di zucchero
mezzo limone
foglie di basilico
olio extravergine di oliva
sale/pepe

- Tagliare il pane (privato della crosta) a grossi cubi e saltarlo in padella con un filo di olio per tostarlo, ma senza annerirlo.
- Mettere in una ciotola con le verdure tagliate a cubetti e i calamaretti lessati velocemente in acqua salata e acidulata con limone.
- Condire con olio, aceto, sale/pepe e basilico spezzetato. Lasciare riposare almeno un'ora in frigo (si possono fare vaschette monoporzioni).
- Sbollentare le cipolle affettate sottili in acqua zuccherata e acidulata con aceto, scolare e lasciare raffreddare.
- Saltare i gamberoni (o mazzancolle) privati del carapace in poco olio.
- Servire la panzanella decorando con le cipolle e i gamberoni (volendo si può lessare più cipolla per poi frullarla e servirla in parte come salsina).

Crunchy Panzanella


Panzanella is a very popular bread salad in summer months, originated in Central Italian regions.
It is based on leftover bread (mostly unsalted Tuscan bread), wet with water, and then combine to celery, cucumber and tomatoes and seasoned with extravirgin olive oil, vinegar, basil, salt and pepper.
Any region and any family has a personal recipe, varying about favorite ingredients to add such as peppers, anchovies, capers, tuna, eggs, onions, oregano, etc.
This version, by Matia Barciulli, chef in "Osteria di Passignano" (should you ever be in Tuscany in the future, don't miss to visit this place, he is very talented) is a little different in the use of bread: just a little time to toast it in a pan to give a peculiar slightly crunchy texture under your teeth.
I did not use squids (but can assure they matches perfectly, I tasted the original) and found only small tropical prawns, but of course bigger ones would make your panzanella smarter!

Serving 4:

200 g stale Tuscan bread
1 cucumber
200 g cherry tomatoes
80 g small squids
2 stalks of celery
half golden or red onion, as you like
8 prawns
white vinegar
a spoonful of sugar
half lemon
basil leaves
extra virgin olive oil
salt/pepper

- Cut the bread (without crust) into big cubes and toast on a large pan with a little oil but not blackened.
- Pour in a bowl with the diced vegetables and squids, quickly cooked in salted and lemon acidulated water.
- Season with oil, vinegar, salt/pepper and chopped basil . Leave to amalgamate at least one hour in the fridge (you can divide the mixture into single servings using small containers).
- Blanch thinly sliced onions in sugared and vinegar acidulated water, drain and let cool.
- Sauté the shrimps without the shell in a little oil.
- Serve the panzanella garnishing with onions and prawns (you could boil more onion then blend and serve aside as sauce).

Solo il nome suona così dolce e il suo colore così femminile, non poteva essere altrimenti per un cocktail che, nonostante la sua gradazione alcolica e il suo tono secco e semplice, pare fosse nato per donne con poca esperienza nel bere. Non a caso fu anche soprannominato girly drink, anche se al suo carattere manca quella nota dolciastra e fruttata che gli attuali bevitori associano ai drinks femminili, e che la granatina solo lievemente mitiga.

3/10 di triple sec
2/10 di succo di limone
1/10 di granatina
cubetti di ghiaccio

Versare gli ingredienti nello shaker, agitare con vigore e versare filtrando nella coppa da cocktail.
Decorare con scorza di limone e qualche chicco di melograno o un fiore.

Pink Lady

Just the name sounds so sweet and its color so feminine but it could not be otherwise for a cocktail that, despite its alcohol content and its dry and simple texture, appears to have been invented for women with little experience in drinking. Ironically it was colloquially known as girly drink, even though its character lacks the sweet and fruity notes that modern drinkers associate with girly drinks, only slightly mitigated by the grenadine.

2/10 lemon juice
1/10 grenadine
ice cubes

Pour all ingredients into the shaker, shake vigorously and strain into cocktail glass.
Garnish with lemon zest and some pomegranate seeds or a flower.

Raita - WHB # 234


Il Raita o raitha è un condimento indiano a base di yogurt, utilizzato solitamente come salsa di accompagnamento, ma nella stagione calda può essere servito anche come insalata.
Lo yogurt è aromatizzato con coriandolo fresco, cumino, menta, paprika, zenzero, aglio, peperoncino, o altre erbe e spezie a piacere. Nello yogurt vengono poi mescolati frutta e verdura crude a seconda della ricetta: cetrioli, peperoni, cipollotti, patate, carote, ananas, ecc.. Il Raita rinfresca il palato in abbinamento coi piatti piccante indiani. Si potrebbe quasi considerare il cugino orientale della salsa greca tzatziki.
Molte sono le ricette che variano a seconda delle regioni, delle spezie usate e della frutta o verdura mescolata. Di seguito due ricette: la prima molto semplice (e forse più incline ad essere accettata dai palati tradizionalisti italiani) della mia cara e pazza amica Susi, che ha vissuto a lungo in India ed è riuscita a coinvolgerci in una fantastica cena indiana (posterò a breve, qualche foto qui), la seconda un po' più saporita tratta dal libro di Madhur Jaffrey (attrice indiana diventata famosa anche per le sue doti culinarie e per aver fatto conoscere al mondo occidentale le varie cucine indiane) "An Invitation to Indian Cooking".


Raita semplice

sale/pepe

Tagliare le verdure a cubetti e mescolarle con lo yogurt. Insaporire con il sale e conservare in frigo. Al momento di servire aggiungere una bella macinata di pepe nero.


Raita di cetrioli di Madhur Jaffrey


1 cetriolo

250 g di yogurt
1 cucchiaino di sale
una macinata di pepe nero
mezzo cucchiaino di semi di cumino tostati e macinati*
un pizzico di peperoncino piccante, facoltativo
un pizzico di paprika per guarnire


- Pelare e grattugiare il cetriolo.
- Mettere lo yogurt in una ciotola e batterlo con la forchetta in modo che diventi liscio e soffice.
- Aggiungere il cetriolo, sale, pepe nero e cumino (tenendone da parte un pizzico per guarnire) e il peperoncino, mescolare bene.
- Guarnire con la paprika e i semi di cumino, coprire e conservare in frigo fino al momento di servire.

* per tostare il cumino, mettere la quantità desiderata di semi interi in una padella pesante (di ferro è la migliore) a fuoco medio. Mescolare 2/3 minuti o fino a quando diventano più scuri. Togliere dal fuoco. Il cumino è ora pronto per essere pestato nel mortaio o tritato con un mattarello. Rende meglio appena fatto, ma si può conservare alcuni giorni in un barattolo chiuso
ermeticamente.

Raita or raitha is a yogurt based Indian condiment, used mostly as sauce or dip, but in hot summer months takes the place of a salad. Yogurt can be flavored with fresh coriander, cumin, mint, paprika, ginger, garlic, pepper or other herbs and spices to taste. Minced raw fruits or vegetables
are then mixed into the yogurt: cucumbers, peppers, onions, carrots, pineapple, depending on the recipe. Raita may cool the palate when eating spicy Indian dishes. And it could almost be consider ed the eastern cousin of Greek Tzatziki sauce.
There are many recipes which vary by region, use of spices and fruit or vegetables mixed into. My first recipe, very simple (and perhaps more inclined to be accepted by traditional Italian tastes) belongs to my dear crazy friend Susi, who has long lived in India and was able to involve our girls' group in a fantastic Indian dinner (will post about it soon, some pictures here); the second one, a bit more tasty, is from the book "
An Invitation to Indian Cooking" by Madhur Jaffrey (an Indian actress famous for her culinary skills and introducing the Western world to the many cuisines of India).

Easy Raita

plain yogurt
peeled cucumber
cherries tomatoes
red bell pepper
onions
salt/freshly ground black pepper

Cut vegetables into cubes and mix with yogurt. Season with salt and keep refrigerated. Before serving add a nice pinch of black pepper.

Cucumber Raita by Madhur Jaffrey

1 cucumber
250 g plain yogurt
1 teaspoon salt
freshly ground black pepper
half teaspoon roasted, ground cumin seeds*
a pinch of cayenne pepper, optional
a pinch of paprika for garnishing

- Empty the yogurt into a serving bowl and beat it well with a fork until is smooth and pastelike.
- Add the cucumber, salt, black pepper, roasted cumin (reserve a pinch for garnish) and cayenne to the bowl with the yogurt.
- Sprinkle with paprika and the pinch of roasted cumin. Cover and refrigerate until ready to serve.

* to roast cumin, place desired amount of whole seeds in heavy skillet (iron is best) over a medium flame. Stir 2 to 3 minutes or until seeds turn a darker brown. Remove from heat. The cumin can now be crashed as easily with a mortar and pestle or with a rolling pin. Best when freshly roasted but can be kept a few days in a tightly covered jar.

"Tagliatelle Day" ... per una giusta e nobile causa

Yesterday I had a very busy morning in the kitchen.
I invited some friends at home and together made a lot of tagliatelle ... and it was "Tagliatelle Day" for a right and noble cause ... and for Pasta Presto Night # 164 hosted this week by Susan from The Well-Seasoned Cook. A big thank to Ruth of Once Upon a Feast, creator of this very popular event.

Tomorrow is going to be "Day in Solidarity" at school: a project carried on throughout the year to make our teenagers more aware and sensible about unlucky people, not necessary living in a poor or fighting country. Infact, all funds we are going to raise will be given to a "Family Community" in the neighborough, just a few kilometers from us. They take care of kids with problems in their families such as violence, drugs, etc. All parents are involved, making sweets, cakes, pasta or whatelse to be sold after the performance of our kids at the Church Theater, and in case it's not enough the sale will continue on Sunday morning after the Mess. Our village is plenty of tourists in this period and we feel very confident and hopeful about the sale!

Recipe by Matia Barciulli, chef in "Osteria di Passignano" (should you ever be in Tuscany in the future, don't miss to visit this place, he is very talented).

Serving 6/8:


400 g plain flour
100 g durum wheat semolina
250/260 g eggs (white and yolk)
a pinch of salt

Beat eggs very well then add flour and quickly knead to amalgamate ingredients.
You can knead in your stand mixer.
Don't work the dough too long, and be aware it's not soft, wrap it in plastic film or in a bag and store in the fridge to rest for at least an hour. All the fibers will release and the dough will become more tender and elastic to roll out (and if it is too soft before the resting time then you will be unable to work it, too sticky). You can prepare the dough even 2 days in advance.

Making tagliatelle:

- cut a piece of dough, flatten with the palms of your hands or using the rolling pin, and start to roll it out in the larger opening of the rollers, then double the pasta and roll again in the same opening, double again and roll.
- then continue to roll (without doubling pasta anymore) until your desired thickness, passing the pasta one time each opening without missing any decrescent opening. Just stop at your desired thickness, this is very personal, some prefer light tagliatelle to be like a cream in the mouth, some prefer to have something full-bodied under their teeth.
- if necessary, might the dough be a little sticky or too soft, just help with a little (but very little) semolina.
- place each lay of pasta on a table-cloth to dry a little, turning it upside down after 5/8 minutes, this operation will help in cutting (cut away irregular edges, you can knead and roll them again).

- I like hand cutting, even though not perfectly regular, because it gives a more rustic look to tagliatelle, but feel free to use the cutting machine if you have.
- roll a lay of pasta, cut tagliatelle using a large rectangular blade knife and the tip of the knife against the cutting board to avoid pressing down with the handle which would crush pasta
- cut a little bit of noodles, open them and shelling on the table-cloth or on pasta dryer racks to prevent sticking.
- then form small nests (single/two servings), lying each on a single kitchen paper: they will be manageable for storage and then to pour into boiling water. These nests can then be stored in a basket covered with a kitchen cloth, in the pantry for a long time, even a month or more. Otherwise, put them in the freezer, well placed in a covered container.
- tagliatelle will cook in a few minutes, depending on their thickness.

You can enjoy your tagliatelle with any kind of sauce, your favorite will be the nicest.
But the simplest and maybe the best to enjoy the purity of handmade pasta is just melted butter (sage to flavor is allowed) and grated parmesan.

Domani per la scuola media di Bardolino sarà la "Giornata della Solidarietà": un progetto realizzato e portato avanti durante l'anno scolastico per sensibilizzare e rendere più consapevoli i nostri ragazzi nei riguardi delle persone meno fortunate, che vivono situazioni disagiate non necessariamente in paesi lontani e poveri o dove purtroppo sono ancora presenti guerre di ogni sorta. Per questa ragione, il sostegno che verrà raccolto sarà donato quest'anno, attraverso il Centro Aiuto Vita, a una Casa Famiglia che opera poco distante da noi, nel centro Salesiano di Albarè. Tutti i genitori sono invitati a preparare dolci, torte, biscotti, pasta, piccoli oggetti o quant'altro possa poi essere venduto nel mercatino allestito davanti al Teatro Parrocchiale dopo la rappresentazione degli stessi ragazzi. E se le vendite dovessero essere misere, si proseguirà la domenica mattina dopo la Messa. E' periodo di di turistii qui sul lago e ci sentiamo molto fiduciosi e ottimisti! Grazie a Michela, Elena e Veronica per il loro aiuto e sostegno.

Questa è la ricetta di Matia Barciulli, dose per 6/8 persone:

400 g di farina
100 g di semola rimacinata di grano duro
250/260 g di uova intere
un pizzico di sale

Sbattere le uova molto bene e impastare velocemente con la farina, anche nella planetaria. Non lavorare l' impasto troppo a lungo, che dovrà essere bello sodo, avvolgerlo nella pellicola o in un sacchetto per alimenti e conservare in frigo a riposare per almeno un'ora. In questo modo la pasta si rilasserà, diventerà più morbida ed elastica, più facile da stendere (per questo se fosse troppo morbida prima del riposo, in seguito sarebbe più difficile lavorare e troppo appiccicosa). Si può preparare la pasta in anticipo, anche due giorni prima.

Se si impasta a mano e si vuole tirare la sfoglia a mano si possono seguire le istruzioni delle Simili, altrimenti ecco come fare con la sfogliatrice elettrica:

- Tagliare un pezzo di pasta, appiattirlo con il palmo delle mani o con il mattarello, e cominciare a tirarla iniziando dall' apertura più larga dei rulli, quindi raddoppiare la pasta e passare di nuovo nella stessa apertura, raddoppiare ancora e ripassare.
- Continuare a tirare la sfoglia (senza raddoppiarla più) fino allo spessore desiderato, passando la sfoglia una volta sola per ogni apertura decrescente. Fermarsi allo spessore desiderato, molto personale, alcuni preferiscono le tagliatelle fini quasi da sciogliersi in bocca, altri preferiscono avere qualcosa di più corposo sotto i denti.
- Se la pasta fosse leggermente appiccicosa o troppo morbida, aiutarsi con un pochino (ma molto poco) di semola rimacinata.
- Stendere ogni sfoglia su una tovaglia ad asciugare un po', girandola dopo circa 10 minuti, in questo modo sarà più semplice tagliarla perchè non si attaccherà (tagliare via i bordi irregolari, si possono riimpastare e tirare di nuovo o fare dei maltagliati).
- Personalmente preferisco il taglio a mano, anche se non perfettamente regolare, perché dà un aspetto più rustico alle tagliatelle, ma se si dispone del tagliapasta si può liberamente usare, nel qual caso non occorre che la pasta asciughi leggermente.
- Arrotolare una sfoglia e tagliare le tagliatelle: per il taglio si usa un coltello grande a lama rettangolare e la punta del coltello dovrà sempre essere appoggiata al tagliere, per evitare di premere verso il basso con la parte del manico, schiacciando così la sfoglia.
-Tagliare un pochino di tagliatelle, aprirle e sgranarle sul tagliere o sui telai asciugapasta per evitare che si attacchino.
- Formare poi dei mucchietti (nidi) mono/bi porzione che, adagiati su pezzi di carta scottex, saranno facilmente gestibili per la conservazione e poi per il trasbordo nell’acqua di cottura. Questi nidi possono essere conservati poi in un cesto, coperto da canovaccio, in dispensa per lungo tempo, anche un mese e più. Altrimenti, mettere i mucchietti in freezer, ben disposti in un contenitore coperto.
- Le tagliatelle cuoceranno in pochi minuti, a seconda del loro spessore.

Si possono gustare le tagliatelle con qualsiasi tipo di sugo, il proprio preferito sarà sicuramente il migliore!
Ma il più semplice e forse il migliore (e non solo a detta delle Simili!) per godere della bontà genuina della pasta fatta in casa è semplice burro fuso (ammessa una foglia di salvia per insaporire) e parmigiano grattugiato.
