Schiacciatina mantovana
Non è un segreto che adori il pane in tutte le sue forme ed espressioni.
Quando Paola mi ha parlato di un libro sul pane che le aveva prestato Gianfranco da cui aveva preso questa favolosa ricetta, la tentazione e il desiderio di averlo tra le mani sono stati più forti di me... il fato ha contribuito positivamente, già con la prima telefonata avevo azzeccato la libreria fornita del volume e in capo a 24 ore potevo comodamente sfogliarlo e perdermi nelle sue foto e nelle sue ricette. Il libro in questione si chiama "Pane" di Anna Gennari*. Racconta la storia del pane, di regione in regione, spiega le tecniche di base, illustra ricette per fare un buon pane casalingo, insegna come non buttarlo via e riciclarlo in pietanze gustose... "...e poi ci vuole il calore umano. Gli impasti ne risentono, dipende da come vengono lavorati. Bisogna sentire l'amore per il pane. Il pane sente se tu lo stai lavorando con amore. Il modo in cui lavori, il tuo stato d'animo, influenzano il rusultato finale", parola di Anna.

* Anna Gennari è una delle pochissime donne chef insignita del premio "Chef Cordon Bleu". Ha collaborato con ristoranti famosi come il "Cipriani" di Venezia, l'"Hassler" e il "Quirinale" di Roma e per 11 anni a Bologna al "Royal Grill" dell'hotel Carlton. La sua è una cucina "sentimentale", legata alla memoria e basata sull'utilizzo e l'esaltazione di semplici materie prime. Ha tenuto diversi corsi di cucina in Italia e all'estero.
La schiacciatina era la merenda dei bimbi mantovani che andavano a scuola: si fermavano dal fornaio e uscivano con un involtino di carta da pane contenente la profumata merenda che avrebbero poi consumato nell'intervallo di metà mattina.
Io abitavo a Milano da piccola, non prendevo la schiacciatina ma una focaccia morbida, che veniva davvero avvolta in una carta marroncina da pane, dove poi si assorbiva tutto l'olio in eccesso... ma quanto buona era e che profumino rimaneva nella cartella!
La vera schiacciatina è fatta col lardo, che ne garantisce la fragranza e il tipico sapore.
Se si volesse sostituire con olio non sarebbe più schiacciatina ma focaccia....ma per una volta, ogni tanto, si può trasgredire e concedersi questo lusso di altri tempi!

Ingredienti:
500g. farina 0
250g. di acqua
15g. di lievito di birra
150g. di strutto
15g. di sale
30g. di olio extra vergine d'oliva

Sciogliere il lievito in 200 ml di acqua tiepida e nell'acqua rimanente sciogliere il sale. Amalgamare gli ingredienti e lavorari finchè l'impasto sarà omogeneo unendo lo strutto a poco a poco. Lavorare fino a completo assorbimento (circa 15 minuti lavorando e battendo per ricavare un impasto meno appiccicoso). Ricavare delle palline di circa 50g. l'una e lasciarle lievitare coperte per 15 minuti.
Schiacciarle col matterello fino ad uno spessore di 3/5mm. ottenendo dei rettangoli di circa 13x17cm., ma sono belle e buone anche diverse fra loro.
Bucherellare la superficie con una forchetta o con il rullo apposito, spennelarle con l'olio e lasciarle lievitare di nuovo per 15 minuti. Cuocere in forno a 190° per circa 12/15 minuti.

Some time ago my friend Paola told me about a very nice book on bread with lovely home recipes. I was tempted and wished to have it in my hands straight away... I was lucky, as soon as my first phone call to a library in Verona was positive and in 24 hours I had the book in my hands, happy to browse through pages of wonderful pictures and recipes. The book is "Bread" by Anna Gennari *. It tells the story of bread, from region to region, explains the basic techniques, presented recipes for making a good homemade bread, teaches how to recycle leftovers into tasty dishes ... "... and then you need human warmth. Doughs do feel it, it all depends on how they are processed. You need to love bread. Bread feels if you are working with love. The way you work and how you feel influences the final result", Anna says.

She worked with famous restaurants such as "Cipriani" of Venice, "Hassler" and the "Quirinale" in Rome and for 11 years in Bologna at the "Grill Royal" of Carlton. Her kitchen is "sentimental", linked to memory and based on the exaltation of simple tradiitonal ingredients. She held various cooking classes in Italy and abroad.
"Schiacciatina" was the snack of school children in Mantua. They used to stop at the bakery's and come out with a roulade of paper containing this fragrant bread that would be consumed later in the morning.
I lived in Milan when I was a child, I didn't buy schiacciatina but focaccia, which was really wrapped in a brown paper, absorbing all the oil in excess ... but that was good and what a lovely smell in the schoolbag!
Real schiacciatina is made with lard, which guarantees its characteristic fragrance and taste.
Would you replace it with oil it would no longer be schiacciatina but focaccia.... and for once in a while, you can break all rules and comfort youself with the taste of good old days gone!

You need:
500g. flour 0
250g. water
15g. yeast
150g. lard
15g. salt
30g. of extra virgin olive oil
Dissolve yeast in 200 ml of warm water and dissolve salt into the remaining water. Mix ingredients and work until the dough is homogenous adding lard gradually. Work until lard is completely absorbed (about 15 minutes working and beating to get a less sticky dough). Divide the dough into balls of about 50g. each and let rise covered for 15 minutes.
Roll out each ball to 3/5mm. thickness, shaping rectangles of about 13x17cm., but different shapes will be good and nice as well.
Riddle the surface with a fork or with the appropriate roll, brush with oil and let rise again for 15 minutes. Bake at 190° for about 12/15 minutes.
