Mousse di albicocche con crumble al cioccolato - WHB # 244

Un dolcetto fresco e leggero, ideale per la stagione estiva.
Le albicocche possono essere poi sostituite dalle pesche, il crumble si può preparare in anticipo e conservare in una scatola di latta.

Ingredienti per 8/10 bicchieri:

1 kilo di albicocche
70 g di burro
70 g di zucchero

per il crumble:

100 g di coccolato al latte o fondente tritato
100 g di mandorle pelate o noci pecan tritate
100 g di burro morbido
90 g di farina
50 g di zucchero di canna
un cucchiaio di cacao amaro in polvere

- Tagliare le albicocche a metà, levare il nocciolo e metterle in una padella larga con il burro e lo zucchero. Cuocere circa 10 minuti finchè si caramellano leggermente, levarne qualcuna per le decorazioni e frullare il tutto. Raffreddare e conservare in frigo. Se piace si può aggiungere un paio di cucchiai di grappa o rum o cognac alla mousse.
- Lavorare il burro con la farina, le mandorle, lo zucchero e il cacao in polvere. Aggiungere il cioccolato, amalgamare bene e mettere il composto in frigo a rassodare.
- Quando ben compatto, sbriciolare grossolanamente il composto su una teglia rivestita di carta forno e cuocere a 150° per circa 15/20 minuti. Sgranare i grumi ancora caldi e lasciare raffreddare.
- Dividere la crema di albicocche nei bicchieri, ricoprire col crumble e guarnire con mezza albicocca caramellata e una fogliolina di menta.

Apricot Mousse with Chocolate Crumble

A light and fresh fruit dessert, ideal in summertime.
When apricots season is over they can be replaced by peaches, the crumble can be prepared in advance and stored in a tin box.

Serving 8/10 cups:

1 kilo apricots
70 g butter
70 g sugar

for the crumble:

100 g finely chopped milk or dark chocolate
100 g finely chopped peeled almonds or pecans
100 g soft butter
90 g flour
50 g sugar cane
1 tbsp unsweetened cocoa powder

- Cut apricots in half, remove the core and put them in a large pan with butter and sugar. Cook about 10 minutes until lightly caramelized, take aside some for garnishing and blend the remaining. Let cool and store in the fridge. If you like you can add a couple of tablespoons of rum or brandy to the mousse.
- Mix butter with flour, almonds, sugar and cocoa powder. Add chocolate, mix well and let the mixture in the refrigerator to harden.
- When very compact, coarsely crumble the mixture on a baking tray (lined with parchment paper) and bake at 150° for about 15/20 minutes. Crumble again the lumps if necessary when still hot and let cool.
- Divide apricot cream into cups, cover with the crumble and garnish with half a caramelised apricot and mint leaves.

Non ho mai assaggiato l'accoppiata albicocca-cioccolato. Che idea geniale! E le foto fanno davvero ingolosire.

Linda, davvero stanno bene insieme, io ho usato il cioccolato fondente perchè non ne avevo al latte, forse con quest'ultimo diventa un dessert più gentile e meno aggressivo.
