Insalata di faraona con castagne ed uva - WHB # 262


Una ricetta semplice ma gustosa (l'aveva proposta Gianfranco alla serata dedicata a Ca' Gioiosa) che può anche diventare un piatto unico leggero, cosa di cui ne avremo tutti un po' bisogno con l'avvicinarsi delle feste!
Mi piace molto la frutta nell'insalata, e solitamente raccolgo anche quella che lasciano nei piatti alcuni dei miei ragazzi ... eh già, tanti ragazzi, tanti gusti! ... ma ad alcuni è piaciuta molto quando l'ho proposta alla cena di San Martino, tanto da ripeterla spesso, anche senza faraona o sostituendola con del semplice pollo (... riciclando anche taluni avanzi ...!).

Per 6/8 persone:
una faraona
1 costa di sedano
1 carota
1 cipolla
olio extravergine di oliva
dado o sale
- Cuocere la faraona in acqua con le verdure e il dado o sale come per fare il brodo, ci vorrà circa un'ora (o mezzora in pentola a pressione).
- Fare intiepidire, scolare la faraona, lasciarla rafreddare e spolparla. Metterla in una ciotola e ricoprirla di olio:in questo modo si può preparare anche con qualche giorno di anticipo, conservandola ben chiusa in un contenitore ermetico in frigo.

20 castagne *
1 grappolo di uva bianca o rosata
qualche gheriglio di noce tritato
olio extravergine di oliva
aceto balsamico
sale
insalata preferita
* per sbucciare facilmente le castagne: inciderle e metterle in una fondina nel microonde, un paio di minuti a potenza massima, aspettare solo qualche secondo che si intiepidiscano e voilà, si sbucceranno in un baleno! Poi sbollentarle qualche minuto in acqua (già nel microonde si ammorbidiscono), devono rimanere consistenti e non sbriciolarsi
- Dividere gli acini in due ed eliminare gli eventuali semi, unirli in una ciotola con le castagne apezzetti e le noci, condire con un pizzico di sale e un filo di olio.
- Sistemare l'insalata sul piatto di portata, sistemare i pezzi di faraona ben scolati, ricoprire con il misto di frutta ed aggiungere qualche goccia di aceto balsamico a piacere.

Guineafowl Salad with Chestunuts and Grapes

A simple but tasty recipe which might be a light main course, I suppose we'll all need that sort of menu before/during/after holidays feasts! I really like to mix fruit with salad, and I usually collect leftovers from my kids' plates ... yeah, so many guys, so many tastes! ... but some of them really liked it when we first had on St. Martin's dinner, and we had again and again, even without a guineafowl or replacing it with chicken, sometimes leftovers of it!

Serving 6/8:
a guineafowl
a stick of celery
1 carrot
1 onion
extra virgin olive oil
stock cubes or salt
- Boil the guineahen in water with vegetables and stock cubes or salt (just for broth), it will take about an hour (or half an hour in a pressure cooker).
- Let it cool a little bit, drain the hen and discharge skin and bones. Place in a bowl and cover with oil: this stepwill allow to prepare it a few days ahead, just store in an airtight container in refrigerator.

20 chestnuts *
1 bunch of white or pinkish grapes
some chopped walnuts
extravirgin olive oil
balsamic vinegar
favorite salad
salt
* a very easy tip to peel chestnuts: make an incision in the convex side, put in a bowl in the microwave, a couple of minutes at maximum, just wait a few seconds to cool and voilà, your chestnuts will be peeled in a flash! Then boil in water just a few minutes (will already soften a bit in the microwave ), must be firm and not crumbled
- Divide the berries in half, remove any seeds, combine with chopped chestnuts and walnuts, season with salt and a little oil.
- Arrange the salad on a serving plate, add well-drained pieces of guineafowl , top with mixed fruit and spread over a few drops of balsamic vinegar to taste.

Wow such a fabulous recipe even as simple as it is! I adore chestnuts but never think of using them in salads! And they are really a gorgeous match with the guinea fowl and grapes! Perfect.
