Torta sfogliata di albicocche e formaggio - WHB # 240

E' tempo di albicocche, io le amo molto e ultimamente ne sto trovando di veramente buone, forse è un anno fortunato! Purtroppo non ho fatto in tempo a godermi quelle del nostro alberello (anzi, di Mamo e Tito, è stato un graditissimo regalo della Prima Comunione!), sono al mare già da qualche settimana, ma ci hanno pensato i ragazzi più grandi a raccoglierle e gustarsele. Da piccola mi dicevano di mangiarne a volontà perchè erano il frutto della giovinezza ... beh, non so quanto giovani ci possano conservare, però di sicuro fanno molto bene: due etti di albicocche fresche forniscono il 100% del fabbisogno di vitamina A di un adulto, e la vitamina A protegge le superfici dell'organismo, interne ed esterne.

Ingredienti:

300 g di pasta sfoglia
200 g di formaggio saporito semimorbido (stilton, gorgonzola o roquefort)
un paio di cucchiai di panna fresca
8 albicocche fresche
6 albicocche secche *
un uovo sbattuto
sale/pepe

* ho usato solo quelle fresche aggiungendone un paio in più

- Stendere la pasta sfoglia: ricavare un rettangolo di circa 20x30 cm. e metterlo sulla teglia del forno ricoperta di carta forno, con la restante pasta ricavare delle strisce per fare la griglia di decorazione.
- Tagliare il formaggio a pezzetti, unirlo alla panna e amalgamare bene. Distribuire poi il composto sulla pasta sfoglia rimanendo a un paio di centimetri dal bordo.
- Tagliare le albicocche a fettine e sistemarle sopra al formaggio. Salare e pepare.
- Comporre la griglia con le strisce di pasta sfoglia avanzata, ripiegare i bordi del rettangolo verso l'interno della torta, pennellare con l'uovo e infornare a 180° per circa 20 minuti o finchè la sfoglia è ben dorata.

Puff Pastry Tart with Apricots and Cheese


It's apricot season in Italy and recently I found them pretty good, maybe it's a lucky year! Unfortunately I could not enjoy our little tree production, I am still on vacation in Elba Island with my youngest kids, but older boys had time to collect and eat all! When I was a child I was told to eat as much as I liked because they were the magical fruit of youth ... well, don't really know how they will keep us young, but certainly they are very healthy: two ounces of fresh apricots provide 100% of the needs of an adult in vitamin A, which protects the body surfaces, both internal and external.

You need:

300 g puff pastry
200 g tasty cheese (Stilton, Gorgonzola or Roquefort)
2 tablespoons heavy cream or crème fraiche
8 fresh apricots
6 dried apricots*
beaten egg
salt/pepper

* I used only fresh ones, a couple more

- Roll out the pastry: draw a rectangle about 20x30 cm. and put it on the baking tray covered with greaseproof paper, with the remaining pastry cut strips for the grid decoration.
- Cut the cheese into small pieces, add to cream and mix well. Then distribute the mixture on the rectangular pastry to an inch from the edge.
- Slice apricots and arrange over the cheese. Season with salt and pepper.
- Shape the grid using pastry strips, fold the edges of the rectangle to the inside of the tart, brush with beaten egg and bake at 180° for about 20 minutes or until the pastry is golden brown.

I find apricots to be such a hit or miss fruit...they're either really good or really awful. But baked into this tart, I'm sure they were quite tasty!

Wow this looks fabulous! The filling sounds like a good old Danish pastry but in that puff pastry like that it is so much better. Mouthwatering!

Joanne, you are quite right, sometimes apricots can be very awful when they don't taste like anything...but this year I have always found very nice and ripe!
