Croccantini al cioccolato - Crunchy Chocolate Bars - WHB # 419


Un dolcetto facilissimo e ghiottissimo.
Durerebbe anche a lungo se ben conservato e se non ci fossero sempre mani in agguato ad afferrarne un pezzetto.
Potrebbe diventare una merenda cioccolatosa alternativa, preparando in anticipo tanti pacchettini avvolti nella stagnola.
L'ho fatto e rifatto, regalato ed apprezzato.
Come si nota dalle foto, meglio tritare la frutta secca a coltello. Frullandole, anche poco, con un mixer c'è il rischio che si sbriciolino troppo, mentre è più carino vedere in superficie i pezzettini dei diversi frutti (e nel primo croccante mi ero sbagliata ed avevo messo tutte le bacche di goji all'interno del composto cioccolatoso).
Ha fatto la sua ottima figura durante le scorse feste natalizie, ma credo verrà spesso ripetuto in occasione di incontri amichevoli e/o festeggiamenti familiari.

Ingredienti:

200 g di biscotti secchi
100 g di pistacchi
120 g di nocciole tostate
30 g di bacche di goji
200 g di cioccolato fondente 70%
100 g di cioccolato al latte
60 g di burro
120 g di sciroppo d'acero
teglia 20x20 cm.

Tritare a coltello nocciole e pistacchi, separatamente.
La prima volta li ho fatti nel Bimby, ma vengono troppo sbriciolati (si può vedere nelle foto), personalmente preferisco che siano a pezzettini più consistenti, specie nello strato che poi ricopre il croccante, aderiscono anche meglio.
In una ciotolina mescolare un cucchiaio di pistacchi, due di nocciole e un terzo delle bacche di goji, e tenere da parte.
Nel frattempo, sciogliere a bagnomaria i cioccolati con il burro e lo sciroppo d'acero. Mescolare spesso e quando si è formata una bella crema togliere dal fuoco e unire la frutta secca e i biscotti, precedentemente sbriciolati i con le mani.
Foderare la teglia con carta forno e versare il composto cioccolatoso. Livellarlo bene poi cospargere la frutta secca tenuta da parte, schiacciando bene con il dorso di un cucchiaio o con un batticarne (preferisco mettere un pezzetto di carta forno tra il batticarne e il croccante), in modo che la frutta secca si attacchi bene al composto.
Lasciare raffreddare il croccante in frigorifero per almeno mezza giornata prima di tagliarlo a quadrotti o a bastoncini.
Si conserva in frigorifero in una scatola di latta foderata di carta forno.

Crunchy Chocolate Bars


A funny easy dessert.
It was one of the favorite during the past Christmas season, but will definetely become a must in our future family and/or friends' gatherings.
It could be also an alternative school snack for children, each piece wrapped in aluminium foi.
As you can see the difference in the photos, it's better to chop the dried fruit with a knife. It's a little risky to use a blender as they can crumble too much, while it is nice to see the different colored pieces of fruit on the top (besides, in the first cake I was wrong and put all goji berries in the chocolate mix).

You need:


 200 g biscuits
100 g pistachios
120 g roasted hazelnuts
30 g goji berries
200 g dark chocolate 70%
100 g milk chocolate
60 g butter
120 g maple syrup
20x20 cm. pan

Chop hazelnuts and pistachios, separately: better with a knife, though a little longer they will look naturally crushed, you can see the difference in the pictures, the first time I used a blender but they got too crumbled.
In a small bowl, mix a tablespoon of pistachios, hazelnuts and two third of goji berries, keep aside.
Meanwhile, melt the chocolate in a double boiler with butter and maple syrup. Stir often and when it comes to a smooth cream, remove from heat and add dried fruit and biscuits, previously crushed by hand.
Line the pan with parchment paper and pour into the choco mixture. Level it well then sprinkle with the remained dried fruit, press well with the back of a spoon or a meat tenderizer (I prefer to put a piece of parchement paper between the cake and the meat tenderizer), so that the nuts will perfectly stick to the compound.
Allow to cool in the refrigerator at least half a day before cutting into squares or sticks.
Store in the refrigerator in a tin/airtighted box lined with parchment paper.

Elisa, infatti, e poi ci sono le mie adorate bacche di goji, un concentrato di mille proprietà rinvigorenti! :-)
Penso che anche il miele vada bene, uno magari non troppo forte, acacia o arancio proverei, e forse qualcosina in meno se molto liquido.
