Crostone con salsa autunnale - WHB # 259

Io, che non mangio mai funghi ma mi piace tantissimo andare a raccoglierli, io, che non li so cucinare e difatti non li cucino mai, io, per la prima volta, pubblico una ricetta ai funghi (accipicchia quante virgole in questa frase!) che Gianfranco ha presentato poche sere fa nella serata dedicata a Cà Gioiosa e che ho subito fatto mia per i nostri festeggiamenti di San Martino.
Per fortuna è molto semplice ed anche veloce, e così me la sono abbastanza cavata (anche se a dire la verità, i funghi freschi di Gianfranco erano migliori, come testimoniano le foto!).

Ingredienti per 4 persone:

4 fette di pane
200 g di funghi (porcini-chiodini-champignon)*
1 dl di panna fresca
18 castagne pelate e sbollentate **
60 g di sedano
30 g di olive taggiasche
olio extravergine di oliva
sale/pepe
uno spicchio di aglio
prezzemolo tritato
burro

* io ho usato dei porcini surgelati della Merlini che già avevo lasciandoli scongelare giusto quei pochi minuti per poterli affettare

** per sbucciare facilmente le castagne: inciderle e metterle in una fondina nel microonde, un paio di minuti a potenza massima, aspettare solo qualche secondo che si intiepidiscano e voilà, si sbucceranno in un baleno! Poi sbollentarle qualche minuto in acqua (già nel microonde si ammorbidiscono), devono rimanere consistenti e non sbriciolarsi

- Mondare e tagliare i funghi, rosolarli in una padella calda a fiamma vivace con un filo di olio e l'aglio, pochi per volta e muovendoli spesso per fare in modo che l'acqua che rilasciano evapori in fretta.
- Unire poi il sedano tagliato a rondelle e sbollentato, le castagne, le olive tagliate e la panna, far insaporire alcuni minuti, quindi aggiustare di sale e pepe e cospargere con il prezzemolo.
- Tostare le fette di pane pennellate con burro fuso in forno, coprirle con la salsa e servire.

Autumn Crostini

This is my first recipe with mushrooms. I really don't like them, well, I love very much going for a walk on the mountains to collect them, but then I don't eat them, can't stand their slippery texture in the mouth. But this is a simple, quick and easy recipe, should say eclectic too, that sort of sauce you can use for appetizers, to accompany roasted meat or to season a pasta.

Serving 4:

4 slices of bread
200 g mixed mushrooms
1 dl cream
18 chestnuts, peeled and blanched *
60 g celery
30 g black olives
extra virgin olive oil
salt/pepper
a clove of garlic
chopped parsley
butter

* a very easy tip to peel chestnuts: make an incision in the convex side, put in a bowl in the microwave, a couple of minutes at maximum, just wait a few seconds to cool and voilà, your chestnuts will be peeled in a flash! Then boil in water just a few minutes (will already soften a bit in the microwave ), must be firm and not crumbled

- Gently wash and slice mushrooms, sauté in a hot skillet over high heat with a little olive oil and garlic, a few at a time and constantly stirring to ensure that the water they release evaporates quickly.
- Then add sliced blanched celery, chestnuts, olives and the cream and let it go a few minutes, season with salt and pepper and sprinkle with parsley.
- Toast the slices of bread in the oven (brushed with melted butter), cover with the sauce and serve.

You know "J" loves mushrooms, but the most he'd love to have everyday is actually "bolognese ragù". So, I'm hoping that you'll post the recipe soon.
