Pane alla frutta - Fruit Bread - BBD #10

Ecco un pane buono, profumato e gustoso, ideale per colazione o a merenda.
Simpatico da fare, sempre targato sorelle Simili!

INGREDIENTI:

Per il lievitino:
150g di farina 0 di forza
140g di latte tiepido
20g di lievito

In una ciotola fare la fontana con la farina, mettere il latte nel mezzo, fonderci il lievito, poi prendere la farina a poco a poco e impastare. Ridurre il lievitino al centro e lasciare riposare fino al raddoppio coperto.

Per l'impasto:
350g di farina 0 di forza
50g di burro fuso
2 cucchiaini di sale
1 cucchiaino di zucchero
140g di latte tiepido
150g di prugne ammollate per 30 minuti
150g di albicocche secche ammollate per 30 minuti
150g di banane tagliate a metà e a tronchetti
1 uovo

Nella ciotola sminuzzare il lievitino unendo il latte e battendo finchè sarà ben amalgamato.
Unire in 2/3 volte la farina sempre battendo, unire il sale, lo zucchero e il burro fuso sempre battendo, rovesciare quindi sul tavolo e lavorare e battere per 8/10 minuti.
Rimettere nella ciotola e far riposare per 45 minuti circa, fino al raddoppio.


Rovesciare l'impasto sul tavolo, dividerlo in 3 parti e con ogni parte fare un filone lungo circa 25/30cm. Con un matterello spianarli fino ad avere dei rettangoli di circa 15x30cm.
Disporre su ognuno un tipo di frutta formando una prima fila lungo il lato lungo, arrotolare un pochino, poi fare una seconda fila e arrotolare, fino ad esaurimento della frutta.

Allungare un pochino i rotoli, disporli paralleli e formare una treccia (partendo da metà e incrociando verso il basso, poi girare la treccia e incrociare l'altra parte, in questo modo la treccia sarà perfetta!). Pennellare con l'uovo battuto e lasciare lievitare per circa un'ora.

Cuocere poi a 200° per 20 minuti, abbassare a 180° per altri 15/20 minuti, se colorasse troppo coprirla con stagnola. Raffredare per circa due ore poi rimettere in forno a 170° per 15 minuti.
Se si fa in anticipo, tenere quest'ultimo passaggio per quando lo si serve.

A lovely and fresh bread with fruit, ideal for breakfast and teatime.

Strong Yeast:
150g strong flour (30% manitoba and 70% plain flour)
140g warm milk
20g yeast

Put the flour in a bowl, make a hole in the middle, mince yeast inside, add milk and mix; then take a little flour and begin to knead, add other flour and knead all through.
Leave it to rise (covered) until doubled.

Dough:
350g strong flour (as above)
50g melted butter
2 teaspoons salt
1 teaspoon sugar
140g warm milk
150g prunes, softened in water for 30 minutes
150g dried apricots, softened in water for 30 minutes
150g bananas, cut in half and then in piecies 3/4cm long
1egg

Crumble strong yeast in the bowl, add milk and beat it until well mixed, then add flour in 2/3 times while beating, then add salt, sugar and melted butter continuing beating.
Pour the dough on the table and knead and beat for 8/10 minutes.
Put it in a buttered bowl and let it rest for about 45 minutes, until doubled.
Then gently pour it on the table, divide it in 3 parts making 3 rolls about 25/30cm long.
Roll out in 3 rectangles of about 15x30cm each.
Put over each rectangle a single kind of fruit along the longest side, then roll, then a second row of fruit and roll, until all the fruit is over.
Try to lenghten a little the 3 rolls and then shape in a plait (start from the middle towards an extremity, then turn the plait and do the same, it will come out a perfect plait!).
Brush it with beaten egg and let it rise for about 1 hour.
Then cook it 200° C for 20 minutes, low to 180° for other 15/20 minutes, if colours too much cover with tin paper.
Let it cool for about 2 hours then put it in oven again 170° for about 15 minutes.
If you prepare it in advance, keep this last passage in the oven just before serving.
