January BBB - Naan

Lynn from Cookie Baker Lynn is our Bread Baking Babes hosting this month's edition and I am very glad and proud to be back with them.
She gives us a look to India choosing a popular bread of that country, Naan.
It's a very nice and deliciuos recipe, very easy and so tasty, we enjoyed very much with ham and cheese but I bet it would be perfect with winter soup like the one we had yesterday.

Curried Naan Bread
from Paul Hollywood's 100 Great Breads
makes 6 naan

scant 4 cups white bread flour, plus extra for dusting
1-1/2 tsp salt
1 Tbsp olive oil, plus extra for frying
2 Tbsp mild curry powder
1/2 oz / 15 g. package compressed fresh yeast
1-1/4 cups water
generous 1/2 cup (golden) raisins
3 Tbsp mango chutney*

* I had no mango chutney and used sweet and sour peppers


1- Put the flour, salt, oil, curry powder, yeast, and water into a bowl and mix together for 2 minutes. Tip out onto a lightly floured counter and knead for 5 minutes, or until the dough is soft and pliable. Let rise for 30 minutes.

2- Line a baking sheet. Incorporate the golden raisins and chutney into the dough. Divide the dough into six pieces, then put on the baking sheet and let rest for 1 hour.

3- Turn the dough out onto a lightly floured counter and, using a rolling pin, flatten each piece into a circle, 25.5 cm / 10 inches in diameter. Put back on the sheet and let rest for 5 minutes.

4- Heat a skillet to medium heat and add a splash of olive oil. Shallow-ofry each dough until browned on both sides, then set aside to cool slightly before serving.



Plain Naan

makes 3 naan

scant 4 cups white bread flour, plus extra for dusting
1-1/2 tsp salt
1/2 oz / 15 g. package compressed fresh yeast*
water to mix
1 tsp cumin seeds
1 tsp caraway seeds
olive oil for frying


1- Line a baking sheet. Put the flour, salt and yeast into a bowl and add enough water to make a soft, but not sloppy dough. Add the seeds, then divide the dough into three pieces and put on the baking sheet. Let rest for 1 hour.


2- Turn the dough out onto a lightly floured counter and, using a rolling pin, flatten each piece into a circle, 10 inches / 25.5 cm in diameter, and let rest for 5 minutes.

3- Heat a skillet to a medium heat and add a splash of olive oil. Shallow-fry each naan until browned on both sides, then set aside to cool slightly before serving.

Il Naan è un pane asiatico molto popolare in diverse regioni del continente. E' un pane lievitato e piatto, molto simile a quello arabo.
Di seguito la ricetta che Lynn di Cookie Baker Lynn ha scelto come tema per questa prima edizione del 2010 delle Bread Baking Babes.
Mi sono molto divertita a farlo, è facile e abbastanza veloce, molto gustoso e particolare. Ce lo siamo mangiato accompagnandolo a salumi e formaggi ma scommetto che sarebbe l'ideale con delle belle zuppe calde invernali, come per esempio questa che abbiamo gustato ieri.

Naan al Curry
dal libro di Paul Hollywood 100 Great Breads
dose per 6 naan

curry naan

450 g di farina, più extra per lo spolvero
1 cucchiaino e mezzo di sale
1 cucchiaio di olio extravergine di oliva, più extra per friggere
2 cucchiai di curry in polvere dolce
15 g. lievito di birra
230/250 g di acqua
mezza tazza di uvetta
3 cucchiai di chutney di mango*

* io non avevo il chutney e ho usato dei peperoni agrodolci avanzati


1 - Mettere la farina, l'olio, il curry in una ciotola, aggiungere l'acqua dove si sarà sciolto il lievito e mescolare il tutto per 2 minuti, aggiungendo anche il sale alla fine. Capovolgere su un piano di lavoro leggermente infarinato e impastare per 5 minuti, o finché la pasta diventa morbida e malleabile. Fare lievitare per 30 minuti coperta (volendosi può fare tutto nell'impastatrice).
2 - Foderare una teglia con carta forno. Incorporate l'uvetta e il chutney all'impasto. Dividere la pasta in sei pezzi, metterli sulla teglia e lasciare riposare per 1 ora coperti.
3 - Girare ogni pezzo di impasto su un piano leggermente infarinato e, con il matterello, appiattire ogni pezzo in un cerchio di circa 25cm. di diametro. Rimettere sulla carta forno e lasciare riposare per 5 minuti.
4 - Scaldare una padella a fuoco medio e aggiungere una spruzzata di olio. Cuocere ogni impasto fino a doratura su entrambi i lati, quindi mettere da parte a raffreddare un po' prima di servire.

Naan semplici
dose per 3 naan

400 g di farina, più extra per lo spolvero
1 cucchiaino e mezzo di sale
15 g. lievito di birra
200/220 g di acqua
un paio di cucchiaini di semi di cumino
olio extravergine di oliva per friggere

1 - Foderare una teglia con carta forno. Mettere la farina, l'olio, il curry in una ciotola, aggiungere l'acqua dove si sarà sciolto il lievito e impastare finoad ottenere un impasto morbido. Aggiungere i semi, quindi dividere l'impasto in tre pezzi e metterli sulla teglia. Coprire e lasciare riposare per 1 ora.
2 - Girare ogni pezzo di impasto su un piano leggermente infarinato e, con il matterello, appiattire ogni pezzo in un cerchio di circa 25cm. di diametro. Rimettere sulla carta forno e lasciare riposare per 5 minuti.
3 - Scaldare uno padella a fuoco medio e aggiungere una spruzzata di olio. Cuocere ogni naan fino a doratura su entrambi i lati, quindi mettere da parte a raffreddare un po' prima di servire.

non vedo l'ora di assaggiarli...sono mesi che provo ad andare al ristorante indiano...ma non ce la faccio...e adesso credo che procrastinerò ancora...visto che l'India mi entra dritta dritta in cucina con queste ricette favolose!!!

Zebra, prova a farteli da sola, le varianti gustose sono molteplici, anche a proprio piacere...e così risparmi sul ristorante!
