Pane ai cinque cereali con noci - BBB's Anniversary




Reading my dear friend Zorra's blog I found a new group with a passion for bread baking founded just one year ago, Bread Baking Babes: Happy Birthday to all of you!
I would like to be part of it as I love baking a lot, so I followed Tanna's instructions, host kitchen of the anniversary challenge, to bake Pane ai Cinque Cereali con Noci, the recipe she choose from "The Italian Baker" by Carol Field.
Even though I am on skiing holidays and couldn't count on my beloved oven, and everybody knows how much is important for a cook to have all his proper utensils, I have tried to do my best and the result was quite good indeed, I was really surprised and my sons appreciated it!
I had to change some flours because couldn't find the right ones and tried half recipe (between brackets), as I would not risk a failure...but it was not, and then we pinched it from hands!



You need:

300g. (150) walnuts
30g. (15) fresh yeast
1/4 (1/8) cup warm water
3 cups (1 and 1/2) water, room temperature
500g. (250) unbleached all-purpose flour
125g. (65) oat flour
125g. (65) rye flour (I use barley)
125g. (65) whole-wheat flour
125g. (65) brown rice flour (I use white rice flour)
1 (half) tablespoon salt

Toast the walnuts in a pan on low fire for som minutes, the don't have to brown but just release flavour, let them cool, chop and set aside.
Mix all the flours, knead 2/3 of them with 2/3 of water (where yeast has been melted), cover and let rest 20 minutes. Knead in the remaining flour, walnuts and salt, work for about 5/8 minutes until is no sticky, in case add a little flour more.
I put the dough to rest (until doubled, about an hour) in a floured basket of about 20cm. diameter* (if you do the whole recipe you need 2 baskets), covering with a large bowl upside down on it.
Then turn it up carefully, cut in 4 pieces, put again to rest for about half an hour on baking paper. Make some cut on top if you like and bake at 180/190° for about 40/50 minutes. Cool on a rack.

Super with butter and speck, or Gorgonzola cheese!

* I learned this nice tip from dearest Sorelle Simili, my favourite baking teachers in Italy, when we baked together maize and farro bread.


Leggendo il blog della mia cara amica Zorra, ho scoperto un altro gruppo di panificatrici agguerrite, le Bread Baking Babes, che proprio in questo mese festeggiano il loro primo anniversario di lavoro insieme: un caro augurio anche da parte mia, ragazze!
Mi piacerebbe farne parte e così ho voluto celebrare insieme a oro panificando il Pane ai Cinque Cereali con Noci che Tanna, padrona di casa dell'evento, ha scelto come pane rappresentativo dal libro di Carol Field "The Italian Baker".
Devo dire che, nonostante non abbia potuto contare sulla mia cucina, e sul mio forno in particolare (sono in vacanza in montagna), sono stata molto contenta del risultato, le noci danno un aroma particolare e intenso, e anche i miei figli, nonostante non fosse in pane "bianco", l'hanno apprezzato!
Ho cambiato qualche farina, non avendo trovato tutte le originali, e ho fatto metà dose (tra parentesi le mie quantità), non volendo rischiare di dovermelo poi mangiare tutto da sola...il risultato è che poi ce lo rubavamo dalle mani!

Ingredienti:

300g. (150) noci
30g. (15) lievito di birra
1/4 (1/8) tazza di acqua tiepida
3 cups (1 and 1/2) acqua temperatura ambiente
500g. (250) farina 0
125g. (65) farina di avena
125g. (65) farina di segale (io ho usato orzo)
125g. (65) farina semintegrale o integrale
125g. (65) farina di riso integrale (io ho usato farina di riso bianca)
1 (metà) cucchiaio di sale fino

Tostare le noci in una padellina per qualche minuto, non devono scurire ma solo rilasciare l'aroma, lasciar raffreddare, tagliare a coltello e mettere da parte.
Mescolare le farine, quindi impastarne 2/3 con 2/3dell'acqua, dove avremo fatto sciogliere illievito. Lasciare riposare coperto per 20 minuti.
Impastare con la restante farina, unire il sale e le noci, per 5/8 minuti fino ad avere un impasto sodo, elastico e non appiccicoso, se occorre aggiungere ancora un cucchiaio di farina. Mettere l'impasto in un cestino infarinato bene di circa 20cm.di diametro* (facendo dose intera ne occorrono due), coprire con una ciotola capovolta soprae lasciare lievitare al raddoppio, circa un'ora. Rigirare il pane con delicatezza sulla spianatoia, tagliarlo in 4, metterlo su carta forno a riposare ancora mezzoretta. Con attenzione fare qualche taglio in superficie se piace, infornare e cuocere a 180/190°per circa 40/50 minuti. Lasciar raffreddare su una griglia.

Strepitoso con burro e speck, o con Gorgonzola come suggerisce Manu.

*questo metodo me l'hanno insegnato le mie care e mitiche Sorelle Simili, quando abbiamo fatto insieme il pane al mais e farro.

Deve essere davvero gustoso questo pane! Poi, a proprsito di cestino: ero convinta che ci volevs uno specifico, invece vedo che si può usare uno normalissimo!

Looks good. I always try halving recipes with a first try but regret it most of the time afterwards :)
