Papa Turmada - Colombia


I am terribly late, should say I lost my plane someway and I do apologize.
I am sure Joan is off from Colombia (6th stop of her Culinary Tour 2010) and will be probably already on her way to Jamaica, but I will send her my postcard anyway, this dish was really a scrumptious surprise for all of us that it's really a credit to Colombian cuisine.
"This baked potato casserole is a typical dish from the northeastern Colombian state "Norte de Santander". The ingredients can be easily found which makes it easy for people outside of Colombia to enjoy this easy to make dish." That's what Igvanegas (an expert cook on Allrecipes, originating from Bucaramanga, Santander, but living in Bogota) writes about his recipe, and I definetely agree with him.

Colombian Turmada Potatoes

You need:

6 large potatoes, peeled and sliced

2 tablespoons extravirgin olive oil

6 links pork sausage, sliced

1/4 cup diced white onion
*
1/4 cup chopped green onion
*
1/2 cup diced fresh tomato
(I used my home-canned tomatoes)
1 teaspoon ground cumin

1/2 teaspoon ground dried thyme (I had fresh)
salt and pepper to taste
3 slices white sandwich bread, cut into 1-inch pieces

1/2 cup milk

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

6 hard-boiled eggs, sliced (I put only 4)

* as I should not eat onions I used a leek

- Preheat oven to 350°F (175°C). Grease a 9x13 inch glass baking dish.
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Heat oil in a large skillet over medium heat; cook the sausage in the hot oil for 5 minutes. Add the white onions and green onions; cook another 5 minutes. Stir in the tomato, cumin, and thyme. Season with salt and pepper. Reduce heat to low and simmer 10 minutes.
- Place the bread cubes in a bowl; pour the milk over the bread making sure to wet each piece.
- Arrange about half of the potato slices into the bottom of the prepared dish. Spread the sausage mixture over the potatoes. Top with succeeding layers of the sliced eggs, about half of the moistened bread, the mozzarella cheese, the remaining potato slices, the remaining moistened bread, and finally the Parmesan cheese.
- Bake in the preheated oven until heated completely, about 30 minutes.

Pasticcio di patate colombiano

In giro per il mondo a scoprire nuove ricette è davvero entusiasmante e sorprendente.
Questa settimana sono in Colombia, e la scoperta di questo piatto unico è stata davvero deliziosa.
Potrebbe essere anche un buono spunto per quando si avanzano quelle noiose patate lesse che qui trovano una pasticciosa ripassata!

Ingredienti:

6 patate grandi, sbucciate e tagliate a fette
2 cucchiai di olio extravergine di oliva
6 salsiccette di maiale a pezzettini
mezza cipolla bianca tritata*
un paio di cipollotti freschi tritati*
3/4 pomodori freschi a cubetti (io ho usato i miei pomodori pelati)
1 cucchiaino di cumino macinato
mezzo cucchiaino di timo secco (io l'avevo fresco)
sale/pepe
3 fette di pane in cassetta bianco a pezzettini
mezza tazza di latte
una mozzarella a pezzettini
4 cucchiai di parmigiano grattugiato
6 uova sode a fette (ne ho messesolo 4)

- Preriscaldare il forno a 180°. Ungere una pirofila di 20x30 cm.
- Mettere le patate in una pentola capiente e coprire con acqua salata. Portare a ebollizione a fuoco alto, poi ridurre il calore, coprire e lasciar cuocere finché sono tenere, circa 20 minuti. Lasciare scolare bene dall'acqua in eccesso.
- Scaldare l'olio in una padella larga a fuoco medio e cuocere la salsiccia per 5 minuti. Aggiungere le cipolle e cuocere altri 5 minuti. Aggiungere i pomodori, il cumino, e il timo. Condire con sale e pepe. Ridurre il calore al minimo e lasciate sobbollire per 10 minuti.
- Mettere i cubetti di pane in una ciotola con il latte sul pane facendo attenzione che ogni pezzo sia immerso.
- Sistemare metà patate sul fondo della pirofila. Coprire con il preparato di salsicce, poi in ordine le uova a fette, la metà del pane inumidito col latte e ben strizzato, la mozzarella. Ricoprire infine con le rimanenti patate, il pane rimasto (sempre ben strizzato) e cospargere di parmigiano.
- Cuocere in forno per circa 30 minuti finchè si sarà formata una bella crosticina dorata.

Che bella pirofila invitante, ricca e gustosa. Mi piace scoprire gusti e profumi delle cucine di altri paesi e questo piatto si addice proprio ai miei gusti...e poi è anche facile da preparare...meglio di così :) baci

Soy venezolana y preparo este plato para aprovechar el pan blanco que me queda. Con pocos ingredientes resulta una turmada muy rica.
