Strudel salato di verdure primavera - WHB # 185

Ho provato la ricetta classica dello Strudel di mele proposto questo mese dalle Daring Bakers e su loro consiglio avevo impastato il doppio di pasta per esercitarsi bene a stenderla come da ricetta.
Stranamente sono stata più brava nella prima stesura che nella seconda, ma ciò non ha influito fortunatamente nella resa del secondo strudel che ho farcito di verdure verdi di stagione: asparagi, piselli freschi (ma quanto mi piace sbucciarli!...mi rilassa e mi ricorda quando lo facevo da bambina), zucchine novelle, fagiolini.


Ingredienti:

una dose di pasta da strudel
un mazzo di asparagi verdi
350g di zucchine novelle
250g di piselli freschi sgusciati
1 porro
olio extravergine di oliva
sale/pepe
qualche cucchiaio di pane grattugiato
qualche cucchiaio di grana grattugiato
4 cucchiai di burro fuso

In una padella tostare il pane grattugiato con un paio di cucchiai di burro per qualche minuto.
Cuocere al dente asparagi, piselli e fagiolini separatamente in acqua leggermente salata oppure in pentola a pressione. Soffriggere il porro affettato in un filo di olio, aggiungere le zucchine a rondelle e cuocere a fiamma viva per 15 minuti, aggiungendo un po' di brodo vegetale se necessario. Unire poi il resto delle verdure, rosolare qualche minuto, salare e pepare.
Stendere la pasta dello strudel su una tovaglia come da ricetta, spalmarla delicatamente con del burro fuso e cospargerla di pane grattugiato. Disporre le verdure a circa 8cm. dal bordo a formare un rettangolo, cospargerle di grana grattugiato. Piegare il primo lembo di pasta sulle verdure e arrotolare lo strudel aiutandosi con la tovaglia. Trasferire sulla teglia da forno ricoperta di carta forno curvando lo strudel a ferro di cavallo per farcelo stare, ripiegando i lembi finali della pasta sotto (in alternativa si possono fare due strudel rettangolari dritti). Pennellare di olio ed se piace cospargere di semi di sesamo o di papavero.
Cuocere a 200° per 30 minuti finchè ben dorato.

Green Strudel

This month's Datring Bakers challenge was about Apple Strudel, mostly to know the right way to knead and stretch the right dough. Linda and Courtney's advice was to make a double batch of the dough in order to practice the pulling and stretching of it.
Surprisingly I was better in the first draft than in the second, but lucky me, my savory strudel was good indeed despite more holes in the pastry!
I stuffed it with green season vegetables: asparagus, fresh peas (I really like so much peeling them, it reminds my childhood and still relax me!), zucchini, green beans. But sure you can fill it with whatever you like most!


You need:

a strudel dough
a bunch of green asparagus
350g zucchini
250g peeled fresh peas
1 leek
extravirgin olive oil
salt/pepper
some tablespoons of breadcrumbs
some tablespoons og grated parmesan
4 tablespoons melted butter

In a frying pan toast breadcrumbs with 2 tablespoons of butter for a few minutes.
Boil asparagus, peas and beans separately in lightly salted water or in a pressure cooker. Fry sliced leek in oil, add zucchini sliced into thin rounds and cook on open flame for 15 minutes, adding some vegetable broth if necessary. Then combine the rest of the vegetables, cook a few minutes, add salt and pepper.
Roll out the dough on a tablecloth as shown in the recipe, spread gently with melted butter and sprinkle with breadcrumbs. Pour the veg mixture around 8cm. from the edge of the pastry to form a rectangle and spread over parmesan. Fold the first strip of pastry on the greens and roll the strudel with the aid of the tablecloth. Place on baking tray covered with baking paper bending the strudel as a horseshoe, tucking the ends under it (or you can make 2 rectangular strudels). Brush with oil and, if you like, sprinkle with sesame or poppy seeds.
Bake at 200° for 30 minutes until golden.
