June Daring Bakers' Challenge - Bakewell Tart...er...pudding


The June Daring Bakers' challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart... er... pudding that was inspired by a rich baking history dating back to the 1800's in England. It was real fun to make it and for the first time in my life I tried Frangipane!
We were asked to use homemade jam and I promptly bought some raspberries (I adore them!) and quickly made a wonderful jam, Nigella docet!


This tart was a real delightful surprise, soft inside, fragrant, excellent. I will put it in my favorites.
You can make a giant tart or little tartellettes: I made these, having 7 of 10 cm. diameter each, using aluminium molds.

Makes one 23cm or 7 (10cm each
)
Prep time:
less than 10 minutes (plus time for the individual elements), more making little tartellettes
Resting time:
15 minutes
Baking time:
30 minutes, 20 minutes for little tartellettes
Equipment needed:
23cm tart pan or pie tin (preferably with ridged edges), or 7 10cm aluminium molds, rolling pin

One quantity sweet shortcrust pastry (recipe follows)
Bench flour
250ml jam or curd, warmed for spreadability (I used 1
1/2 tbsp each tartellette)
One quantity frangipane (recipe follows)
One handful blanched, flaked almonds

Assembling the tart
Place the chilled dough disc on a lightly floured surface. If it's overly cold, you will need to let it become acclimatised for about 15 minutes before you roll it out. Flour the rolling pin and roll the pastry to 5mm (1/4”) thickness, by rolling in one direction only (start from the centre and roll away from you), and turning the disc a quarter turn after each roll. When the pastry is to the desired size and thickness, transfer it to the tart pan, press in and trim the excess dough. Patch any holes, fissures or tears with trimmed bits. Chill in the freezer for 15 minutes.

Preheat oven to 200°.

Remove shell from freezer, spread as even a layer as you can of jam onto the pastry base. Top with frangipane, spreading to cover the entire surface of the tart. Smooth the top and pop into the oven for 30 minutes. Five minutes before the tart is done, the top will be poofy and brownish. Remove from oven and strew flaked almonds on top and return to the heat for the last five minutes of baking.

The finished tart will have a golden crust and the frangipane will be tanned, poofy and a bit spongy-looking. Remove from the oven and cool on the counter. Serve warm, with crème fraîche, whipped cream or custard sauce if you wish.

When you slice into the tart, the almond paste will be firm, but slightly squidgy and the crust should be crisp but not tough.

Sweet shortcrust pastry

Prep time: 15-20 minutes
Resting time: 30 minutes (minimum)
Equipment needed: bowls, box grater, cling film

225g all purpose flour
30g sugar
½ tsp salt
110g unsalted butter, cold (frozen is better)
2 egg yolks
½ tsp almond or vanilla extract (optional)
1-2 tbsp cold water

Sift together flour, sugar and salt. Grate butter into the flour mixture, using the large hole-side of a box grater. Using your finger tips only, and working very quickly, rub the fat into the flour until the mixture resembles bread crumbs. Set aside.

Lightly beat the egg yolks with the almond extract (if using) and quickly mix into the flour mixture. Keep mixing while dribbling in the water, only adding enough to form a cohesive and slightly sticky dough.

Form the dough into a disc, wrap in cling and refrigerate for at least 30 minutes.

Frangipane

Prep time: 10-15 minutes
Equipment needed: bowls, hand mixer, rubber spatula

125g unsalted butter, softened
125g icing sugar
3 eggs
½ tsp almond or vanilla extract
125g ground almonds*
30g all purpose flour

* you can use 125g peeled almond and finely crush them in the blender but with a little sugar (20g) from the total amount of icing sugar (125g)

Cream butter and sugar together for about a minute or until the mixture is primrose in colour and very fluffy. Scrape down the side of the bowl and add the eggs, one at a time, beating well after each addition. The batter may appear to curdle. In the words of Douglas Adams: Don’t panic. Really. It’ll be fine. After all three are in, pour in the almond extract and mix for about another 30 seconds and scrape down the sides again. With the beaters on, spoon in the ground nuts and the flour. Mix well. The mixture will be soft, keep its slightly curdled look (mostly from the almonds) and retain its pallid yellow colour.

Bakewell Tart

Ecco una torta molto British! Questa torta è stata una vera sorpresa di dolcezza , morbida e fragrante nello stesso tempo. E mi ha dato la possibilità di conoscere il frangipane, che non avevo mai fatto prima. La metterò tra le favorite perchè merita davvero. E merita anche una buona marmellata di farcitura, meglio se fatta in casa! Se la vostra dispensa piange, seguite la ricetta di Nigella per una marmellata di lamponi (o altro frutto di bosco) bella e pronta in pochi minuti!

Si può fare una torta unica o singole tartellette: ho fatto quest'ultime, me ne sono venute 7 (10 cm. di diametro), utilizzando gli stampi in alluminio usa e getta.

Tempo di preparazione: meno di 10 minuti (un po' di più se si opta per le tartellette)
Tempo di riposo: 15 minuti
Tempo di cottura: 30 minuti, 20 minuti per le tartellette

Pasta frolla come da ricetta seguente
Farina da spolvero
250 ml marmellata (io ho usato 1 cucchiaio e mezzo per ogni tartelletta)
Frangipane come da ricetta seguente
Una manciata di mandorle in scaglie

Assemblare la torta
Posizionare la pasta su una superficie leggermente infarinata. Se è troppo fredda, ha bisogno di acclimatarsi per circa 15 minuti prima di stenderla col matterello. Stenderlaa uno spessore di 5 millimetri, lavorando in una sola direzione (si inizia dal centro e si matterella verso l'esterno) e ruotando il disco di un quarto di giro dopo rollata. Trasferire il disco di pasta nella tortiera, premere bene e tagliare la pasta in eccesso. Coprire ogni eventuale buco con dei ritagli di pasta. Riporre in freezer per 15 minuti.

Preriscaldare il forno a 200 °.

Togliere la pasta dal congelatore e spalmare uno strato di marmellata sulla base. Ricoprire con il Frangipane, distribuendolo bene fino a coprire l'intera superficie della torta. Lisciare bene la superficie con la spatola e cuocere in forno per 30 minuti. Cinque minuti prima che la torta sia pronta, la parte superiore sarà morbida e dorata. Togliere dal forno, distribuire le scaglie di mandorle e terminbare la cottura.cinque minuti di cottura.

Togliere dal forno e lasciare raffreddare. Servire caldo, con crème fraiche, panna montata o altra crema.

Pasta frolla
Tempo di preparazione: 15-20 minuti
Tempo di riposo: 30 minuti (minimo)

225g di farina 00
30g di zucchero
½ cucchiaino di sale
110g burro non salato, freddo (congelato è meglio)
2 tuorli d'uovo
½ cucchiaino di estratto di vaniglia o di mandorle (facoltativo)
1 o 2 cucchiai di acqua fredda

Setacciare insieme farina, zucchero e sale. Grattugiare il burro nella miscela di farina, usando i fori più grandi della grattugia (io l'ho tagliato fine a coltello). Usando la punta delle dita e molto rapidamente strofinare il grasso nella farina fino a quando la miscela assumerà l'aspetto di briciole. Mettere da parte.

Battere leggermente i tuorli con l'estratto di mandorla (se utilizzato) e mescolare velocemente nella miscela di farina. Sempre mescolando aggiungere poca acqua alla volta, fino a formare una pasta leggermente appiccicosa.

Fare una palla, avvolgerla nella pellicola trasparente e far riposare in frigorifero per almeno 30 minuti.

Frangipane
Tempo di preparazione: 10-15 minuti

125g burro non salato, ammorbidito
125g di zucchero a velo
3 uova
½ cucchiaino di estratto di vaniglia o di mandorle
125g mandorle tritate*
30g di farina 00

* Potete usare 125g di mandorle intere pelate e tritate nel frullatore con 20g di zucchero presi dai 125 di quello a velo velo

Lavorare il burro e zucchero insieme per circa un minuto o fino a quando la miscela e bella morbida. Aggiungere le uova, una alla volta, battendo bene dopo ogni aggiunta. Non preoccuparsi anche se pare che la crema impazzisca, non succederà! Versare poi l'estratto di mandorla e mescolare per circa altri 30 secondi, raschiando e tirando giù la crema anche dalle pareti della ciotola. Usando la frusta, aggiungere la polvere di mandorle e la farina. Mescolare bene (volendo si può usare lo sbattitore elettrico). La miscela sarà morbida e dovrà mantenere il suo colore giallo pallido.

Ago, me ne sono mangiate due in un colpo solo!!! Forse leggermente troppo dolci per il mio gusto personale ma veramente fantastiche!

Grazie a tutti, domani inseerirò anche la ricetta in italiano, che sembrerà lunga da leggere ma è veramente facile e sicuramente da fare e rifare, troppo buone!
