June DB Challenge - Pavlova al Cioccolato

Questo mese la ricetta scelta da Dawn di Doable and Delicious per la sfida delle Daring Bakers è la Pavlova al Cioccolato con Mousse di Mascarpone al Cioccolato tratta dal libro "Chocolate Epiphany" di Francois Payard.
Ho già fatto una Pavlova precedentemente e mi piacciono moltissimo le meringhe, e da quando ho imparato a cuocerle bene seguendo le indicazioni di Santin mi diverto troppo a farle (e poi i miei ragazzi ne sono ghiottissimi!) ... per cui la ricetta di questa sfida sembrava fatta apposta per noi!
Ne ho approfittato e l'ho fatta subito a inizio giugno in occasione di un doppio festeggiamento: il compleanno di Mamo, l'ultimo della nostra cucciolata, e quello di Ivan, un caro amico che avrebbe spento le candeline il giorno dopo. La mousse di mascarpone al cioccolato è strepitosa, la meringa bella croccante, l'unico "difetto" è la grande quantità di crema inglese che da la ricetta, secondo me meglio dimezzare la dose, serve solo come guarnizione e quindi ne basta poca.

C'è una sorta di polemica tra Australia e Nuova Zelanda circa la paternità del dolce, dedicato ad Anna Pavlova, rivendicata da entrambe le nazioni e scelto come dolce nazionale delle due.
La Nuova Zelanda sostiene che il dolce sia stato inventato quando la ballerina si fermò a Wellington durante il suo tour mondiale nel 1926. L'Australia sostiene che l'inventore fosse uno chef di Perth che dedicò questo dolce alla ballerina nel 1929 , sempre in occasione del suo tour. Comunque sia, la grande ballerina ha conquistato i cuori e i palati di più chefs, che ancora le rendono onore in ogni Pavlova offerta!

Si può utilizzare succo d'arancia al posto del Grand Marnier e omettere la sambuca nella crema al mascarpone per la versione analcolica.
La ricetta può essere eseguita anche tutta in un giorno, osservando i vari tempi per i diversi passaggi:
- mentre le meringhe cuociono si può preparare la crema inglese (circa 15 minuti).
- mentre la crema inglese si raffredda, si può preparare la mousse di mascarpone al cioccolato (circa 15 minuti).
- se si fa la crema inglese il giorno prima, si dovrebbe completare il dolce il dolce in circa 2/3 ore, tempo di cottura delle meringhe compreso.


Meringa al cioccolato:
3 albumi grandi
110 grammi di zucchero semolato
30 g di zucchero a velo
30 grammi di cacao in polvere
- Preriscaldare il forno a 95º. Foderare due teglie con carta forno.
- Mettere gli albumi in una ciotola e montare con la frusta elettrica. Quando quasi ben montati aumentare la velocità e via via aggiungere circa 1 cucchiaio di zucchero semolato alla volta fino ad esaurimento. (i bianchi devono così essere ben essere sodi ma non asciutti).
- Setacciare lo zucchero a velo e il cacao sopra gli albumi e delicatamente amalgamare con una spatola. Sembreranno riluttanti all'inizio ma poi piano piano il composto si unirà.
- Riempire una tasca da pasticcere con la meringa e distribuirla sulla carta forno in qualunque forma si voglia. In alternativa, si può disporre a cucchiaiate e livellare poi con il dorso del cucchiaio.
- Cuocere in forno per 2/3 ore fino a quando le meringhe diventano asciutte e croccanti. Raffreddare e conservare in un contenitore ermetico per massimo 3 giorni.

Mousse di Mascarpone al Cioccolato:
355 ml di panna
scorza grattugiata di 1 limone
255 gr di cioccolato 70% tritato
390 gr mascarpone
pizzico di noce moscata
2 cucchiai di Grand Marnier (o succo d'arancia)
- Mettere 120 ml di panna e la scorza di limone in una casseruola e scaldare a fuoco medio-alto. Una volta caldo, aggiungere il cioccolato e mescolare finchè ben sciolto. Trasferire il composto in una ciotola e lasciare raffreddare a temperatura ambiente.
- Mettere il mascarpone, la rimanente panna e la noce moscata in una ciotola. Montare con un frullino a velocità bassa per un minuto, aggiungere il Grand Marnier e continuare a velocità media per pochissimi minuti finchè inizia a fare le punte. Non esagerare altrimenti monta troppo e poi si sfalda e diventa burro.
- Mescolare circa ¼ della crema di mascarpone nel cioccolato, poi aggiungere anche il resto ed amalgamare bene. Riempire una tasca da pasticcere con la mousse e decorare la Pavlova.

Crema di mascarpone leggera, per guarnire:
1 ricetta di Crema Inglese
120 ml di mascarpone
2 cucchiai di Sambuca (facoltativo)
120 ml di panna
Preparare la crema inglese. Lentamente aggiungere il mascarpone e la Sambuca poi lasciare raffreddare il composto. Mettere la crema in una ciotola e sbattere con frullino elettrico finchè diventa soffice e corposa. Aggiungere la panna al composto di mascarpone.


Creme Inglese (componente della crema di mascarpone di cui sopra):
235 ml di latte intero
235 ml di panna
1 stecca di vaniglia o 1 cucchiaino di estratto di vaniglia
6 tuorli da uova grandi
75 grammi di zucchero
- In una terrina sbattere insieme i tuorli e lo zucchero finchè la miscela diventa giallo pallido.
- Unire latte, panna e vaniglia in una casseruola e mettere a fuoco medio-alto, portando il composto a ebollizione. Togliere dal fuoco.
- Versare circa ½ tazza di liquido caldo nei tuorli sbattuti, mescolando velocemente con una frusta per evitare che le uova cuociano. Versare il composto nella pentola, aggiungere con la restante panna e mettere sul fuoco a calore medio. Mescolare costantemente con un cucchiaio di legno fino a quando il composto si addensa leggermente e "vela" il dorso del cucchiaio di legno. Non cuocere troppo!
- Togliere il composto dal fuoco e passarla attraverso un setaccio a maglia fine. Coprire e refrigerare fino a quando il composto si presenterà asciutto e completamente raffreddato, circa 2 ore o meglio tutta la notte.


Assemblggio del dolce:
Distribuire la mousse sulla pavlova e condire con la crema di mascarpone.
Spolverare con zucchero a velo e aggiungere frutta fresca a piacere.

June DB Challenge - Chocolate Pavlova

The June 2010 Daring Bakers’ challenge was hosted by Dawn of Doable and Delicious challenged the Daring Bakers’ to make Chocolate Pavlovas and Chocolate Mascarpone Mousse. The challenge recipe is based on a recipe from the book Chocolate Epiphany by Francois Payard.

The recipe is comprised of three parts, four if you include the crème anglaise. You must make the chocolate pavlovas, the mascarpone mousse and the mascarpone cream. You can use orange juice for the Grand Marnier in the mousse if you don’t use alcohol and you can omit the sambuca from the mascarpone cream.
The recipe can be made in one day although there are several steps involved.
- While the pavlovas are baking, the crème anglaise should be made which will take about 15 minutes.
- While it is cooling, the chocolate mascarpone mousse can be made which will take about 15 minutes.
- There will be a bit of a wait time for the mascarpone cream because of the cooling time for the Crème Anglaise.
- If you make the Crème Anglaise the day before, the dessert should take about 2 hours including cooking time for the pavlovas.

I made Pavlova before and I am very fond of Meringues since I finally learned how to bake them properly. So it was quite easy and enjoyable to join the challenge this month.
I first made the Pavlova following the recipe step by step for my youngest son's birthday at the beginning of June, a small one for him and a big one for a dear friend of us celebrating his birthday the day after. All our guests really appreciated thanks very much Dawn for the lovely recipe! I should only halve the crème anglaise amount, think it's too much for drizzling, but anyway was pretty good!

Chocolate Meringue (for the chocolate Pavlova):
3 large egg whites
½ cup plus 1 tbsp (110 grams) white granulated sugar
¼ cup (30 grams) confectioner’s (icing) sugar
1/3 cup (30 grams) cocoa powder
- Place a rack in the center of the oven and preheat to 200º F (95º C) degrees. Line two baking sheets with silpat or parchment and set aside.
- Put the egg whites in a bowl and whip until soft peaks form. Increase speed to high and gradually add granulated sugar about 1 tbsp at a time until stiff peaks form. (The whites should be firm but moist.)
- Sift the confectioner’s sugar and cocoa powder over the egg whites and fold the dry ingredients into the white. (This looks like it will not happen. Fold gently and it will eventually come together.)Fill a pastry bag with the meringue. Pipe the meringue into whatever shapes you desire. Alternatively, you could just free form your shapes and level them a bit with the back of a spoon. (Class made rounds, hearts, diamonds and an attempt at a clover was made!).
- Bake for 2-3 hours until the meringues become dry and crisp. Cool and store in an airtight container 
for up to 3 days.

Chocolate Mascarpone Mousse (for the top of the Pavlova base):
1 ½ cups (355 mls) heavy cream (cream with a milk fat content of between 36 and 40 percent)
grated zest of 1 average sized lemon
9 ounces (255 grams) 72% chocolate, chopped
1 2/3 cups (390 mls) mascarpone
pinch of nutmeg
2 tbsp (30 mls) Grand Marnier (or orange juice)
- Put ½ cup (120 mls) of the heavy cream and the lemon zest in a saucepan over medium high heat. Once warm, add the chocolate and whisk until melted and smooth. Transfer the mixture to a bowl and let sit at room temperature until cool.
- Place the mascarpone, the remaining cup of cream and nutmeg in a bowl. Whip on low for a minute until the mascarpone is loose. Add the Grand Marnier and whip on medium speed until it holds soft peaks. (DO NOT OVERBEAT AS THE MASCARPONE WILL BREAK.).
- Mix about ¼ of the mascarpone mixture into the chocolate to lighten. Fold in the remaining mascarpone until well incorporated. Fill a pastry bag with the mousse. Again, you could just free form mousse on top of the pavlova.

Mascarpone Cream (for drizzling):
1 recipe crème anglaise
½ cup (120 mls) mascarpone
2 tbsp (30 mls) Sambucca (optional)
½ cup (120 mls) heavy cream
- Prepare the crème anglaise. Slowly whisk in the mascarpone and the Sambucca and let the mixture cool. Put the cream in a bowl and beat with electric mixer until very soft peaks are formed. Fold the cream into the mascarpone mixture.

Crème Anglaise (a component of the Mascarpone Cream above):
1 cup (235 mls) whole milk
1 cup (235 mls) heavy cream
1 vanilla bean, split or 1 tsp pure vanilla extract
6 large egg yolks
6 tbsp (75 grams) sugar
- In a bowl, whisk together the egg yolks and sugar until the mixture turns pale yellow.
- Combine the milk, cream and vanilla in a saucepan over medium high heat, bringing the mixture to a boil. Take off the heat.
- Pour about ½ cup of the hot liquid into the yolk mixture, whisking constantly to keep from making scrambled eggs. Pour the yolk mixture into the pan with the remaining cream mixture and put the heat back on medium. Stir constantly with a wooden spoon until the mixture thickens enough to lightly coat the back of a wooden spoon. DO NOT OVERCOOK.
- Remove the mixture from the heat and strain it through a fine mesh sieve into a bowl. Cover and refrigerate until the mixture is thoroughly chilled, about 2 hours or overnight.

Assembly the dessert:
Pipe the mousse onto the pavlovas and drizzle with the mascarpone cream over the top.
Dust with confectioner’s sugar and fresh fruit if desired.

May DB Challenge - Croquembouche o Pièce Montée

La padrona di casa dell sfida delle Daring Bakers di questo mese è Cat di
Little Miss Cupcake; la ricetta da lei scelta è il Croquembouche, o Pièce montée, o semplicemente cascata di profiteroles basata sulle ricette di Peter Kump’s Baking School a Manhattan e Nick Malgieri.

Da Wikipedia: il croquembouche è un tipico dolce francese, formato da una "montagna" di bignè, la cui altezza può variare dei 20 cm a anche 1 m. I bignè sono preparati con pasta Choux e possono essere riempiti con panna, crem pasticcera o crema chantilly. Per tenere insieme la montana di bigné si utilizza del caramello caldo come "collante" che indurendosi tiene insieme l'intera struttura. La sua caratteristica è che al palato risulta prima croccante e successivamente morbida da ciò deriva anche il suo nome. Infatti in lingua francese il termine "Croque en bouche" può essere tradotto come "croccante in bocca" e in effetti il morbido bigné scrocchia in bocca con la sua glassa croccante al caramello. Il croquembouche puo essere decorato in vari modi ma quello tradizionale è formato da un sottile velo di caramello filato che avvolge l'intero dolce. Il caramello viene filato utilizzando una forchetta e disegnando dei fili su una carta oleata che poi verranno presi e adagiati sul dolce o alternativamente il caramello viene direttamente schizzato sul croquembouche. Per la sua complessità, questo dolce è usato solitamente in matrimoni, cene natalizie o in occasioni particolari.
Questa ricetta ha 3 componenti principali: la pasta per i bigné, la crema pasticcera, e la glassa usata per il montaggio e le decorazioni. Si può acquistare o fare una struttura conica di cartone per costruire la piramide oppure si possono usare gli stuzzicadenti come aiuto, anche se per preparazioni non troppo alte è relativamente facile usanre soloi bignè e la glassa come colla.
Ci vuole solo un po' di tempo per assemblare le varie componenti, che non richiedono alcun ingrediente speciale per la loro preparazione. E una volta presa la mano, sarà una gioia poter esprimere la propria creatività ogni volta in un modo doverso e preparare cascate di profiteroles per ogni occasione.

Ho eseguito la ricetta in un solo pomeriggio, aiutata da una nuorina compiacente e diligente, mandando via a gran fatica mani che si allungavano per rubare i bignè o assaggiare le creme. E poi mi veniva da ridere perch
è ogni ragazzo che passava dalla cucina, vedendoci così prese ed impegnate, ingenuamente domandava: ma cosa si festeggia oggi? di chi è il compleanno?Avevo già fatto i bignè in precedenza, quindi non ho trovato difficoltà nell'eseguire la ricetta. Mi ha fatto dannare il caramello, non sono brava con le decorazioni e soprattutto non avevo tempo (chissà perchè mi riduco sempre all'ultima ora ... ma con la fine delle scuole gli impegni sono così tanti che il calendario in testa proprio non entra più!), ho giusto fatto una stellina di ripiego. Ma in queste mesi estivi prenderò lezioni, ho già adocchiata una maestra bravissima, e mi eserciterò a dovere!


DB may 2010 - croquembouche



La ricetta fornisce 3 varianti di crema pasticcera: vaniglia, caffè e cioccolato, ma ogni possibile gusto può essere realizzato e reso personale. È possibile utilizzare una glassa di cioccolato o di caramello o anche entrambe (seguono le ricette).
Tempo di preparazione: l'impasto per i bigné va utilizzato subito, così come la glassa al cioccolato o al caramello. Però la glassa che fa da collante ha bisogno di qualche ora per indurire. La crema pasticcera può essere fatta un paio di giorni in anticipo e conservata in frigorifero fino al momento dell'uso. Avrete bisogno di circa 10 minuti per preparare la pasta sfoglia, 10 minuti per formare i bigné e circa 30 minuti per cuocerli. Si possono conservare un giorno in una scatola ermetica. Per la crema pasticcera occorrono circa 10 minuti più almeno 6 ore o tutta la notte per raffreddarla. le glasse sono pronte in circa 10 minuti.


Attrezzatura necessaria:

• teglie diverse
• carta da forno
• una frusta
• un pennello da cucina
• una tasca da pasticcere e un paio di punte (tonda semplice per fare i bigné e piccola per la crema)
• una superficie piana o un'alzatina su cui montare la piramide
• decorazkioni perla piramide: nastri, confetti, fiori freschi, granella di zucchero, biscottini, cioccolatini, ecc.


Per la crema pasticcera alla vaniglia:

225 ml. latte intero
2 cucchiai di maizena
6 cucchiai (100 g.) di zucchero
1 uovo grande
2 tuorli grandi
2 cucchiai (30 g.) di burro non salato
1 cucchiaino di vaniglia

Sciogliere la maizena in ¼ tazza di latte. Unire il resto del latte con lo zucchero in un pentolino, portare ad ebollizione, togliere dal fuoco.
Sbattere le uova intere nsieme ai tuorli e unirle al composto di maizena. Versare 1/3 del latte bollente nella miscela di uova, sbattere costantemente in modo che le uova non inizino a cucinare.
Bollire ancora il resto del latte e poi versarlo a filo sul composto di uova, sbattendo continuamente con la frusta di continuare. Continuare a mescolare con la frusta (ed è importante perchè le uova non devono cuocere) fino a quando la crema arriva a bollore. Togliere dal fuoco e aggiungere burro e vaniglia.
Versare la crema in una ciotola di ceramica o acciaio inossidabile e raffreddarla mescolando. Quindi coprirla con la pellicola premendola con fermezza contro la superficie. Conservare in frigo fino al momento dell'uso.


Per la crema pasticcera al cioccolato:

Portare ¼ tazza (circa 50 cl.) di latte ad ebollizione in un pentolino, togliere dal fuoco e aggiungere circa 80 gr. di cioccolato fondente tritato e mescolare finchè ben sciolto e la crema sarà liscia. Aggiungere alla crema pasticcera quando si mette il burro e la vaniglia.
Per la Crema Pasticcera al Caffè:
Sciogliere 1 cucchiaino e mezzo di caffè istantaneo in 1 cucchiaino e mezzo di acqua bollente. Unire alla crema pasticcera con il burro e la vaniglia.


Impasto per bigné (circa 28):

175 ml. di acqua
85 g. di burro non salato
un pizzico di sale
1 cucchiaio di zucchero
125 gr di farina
4 uova grandi dimensioni
1 uovo e un pizzico di sale per pennellare

Preriscaldare il forno a 220°. Foderare due teglie con carta forno.

- Unire acqua, burro, sale e zucchero in una casseruola a fuoco medio. Portare a bollore e mescolare di tanto in tanto. Al bollore, togliere dal fuoco e unire la farina setacciata, mescolando. Rimettere sul fuoco e cuocere, mescolando costantemente fino a quando la pastella si asciuga leggermente e inizia a staccarsi dalle pareti della pentola.
- Trasferire in una ciotola e mescolare con un cucchiaio di legno per raffreddarla.
Aggiungere un uovo. Mescolare con delicatezza inizialmente e poi con più fermezza per farlo assorbire bene dall'impasto. Si aggiungerà l'uovo successivo quando il precedente sarà stato completamente assorbito e l'impasto non risulterà umido in superficie. Proseguire per tutte le uova.

- Trasferire la pastella in una sacca da pasticceria con punta grande tonda (oppure direttamente dalla sacca tagliando in sbieco la parte finale). Spremere e formare i bigné, circa 3cm. alti e 3cm. larghi. Usando un dito pulito immerso in acqua calda, premere delicatamente verso il basso le punte che si formano sulla parte superiore dei bigné, per mantenere la loro forma a sfera. Pennellare delicatamente con l'uovo sbattuto con un pizzico di sale.

- Cuocere i bigné a 220° per circa 10 minuti, si gonfieranno e tenderanno a dorarsi. Abbassare la temperatura a 180° continuando la cottura fino a quando saranno ben dorati e asciutti, circa 20 minuti. Raffreddare su una griglia. Possono essere conservati in una scatola ermetica durante la notte.

- Riempire i bigné con la crema pasticcera utilizzando la siringa apposita con punta fina. Sistemarli su una teglia e conservarli brevemente in frigo mentre si prepara la glassa.


Glassa al cioccolato:

200 g. di cioccolato tritato di prima qualità semidolce

Sciogliere il cioccolato a bagnomaria o nel microonde. Mescolare ad intervalli regolari per evitare che si bruci. Utilizzare immediatamente.


Glassa al caramello:

225 gr di zucchero
½ cucchiaino di succo di limone

Unire lo zucchero e il succo di limone in una casseruola e mescolare con un cucchiaio da cucina in metallo finché lo zucchero non somiglia sabbia bagnata. Mettere a fuoco medio, senza mescolare fino a quando lo zucchero inizia a sciogliersi intorno ai lati della padella e il centro inizia a fumare. Iniziare allora a mescolare lo zucchero. Continuare a cuocere, mescolando di tanto in tanto fino a quando lo zucchero è di un bel colore ambrato. Togliere dal fuoco immediatamente, si può appoggiare la pentola su acqua ghiacciata per fermare la cottura. Utilizzare immediatamente.


Assemblaggio della piramide di bigné


Per avere un'idea di come potrebbe essere il risultato finale, sarebbe opportuno fare delle prove con i bigné vuoti. Ci si può aiutare con un disegno a matita sulla carta forno, sarà più facile poi seguirlo.
Una volta pronti per assemblare il dolce, immergere la parte superiore di ogni bigné nella glassa (attenzione al caramello, potrebbe essere ancora caldo!)e iniziare il montaggio. La glassa farà anche da collante per tenerli uniti, ma si possono usare degli stuzzicadenti come aiuto, come riportato nei video che seguono.
Una volta terminata la piramide, si può decorare con la restante glassa o con l'utilizzo di nastri, granella di zucchero, confetti, fiori, ecc.

May DB Challenge - Croquembouche or Pièce Montée

The May 2010 Daring Bakers’ challenge was hosted by Cat of
Little Miss Cupcake. Cat challenged everyone to make a piece montée, or croquembouche, based on recipes from Peter Kump’s Baking School in Manhattan and Nick Malgieri.

It was a very nice challenge, I did pate a choux before and I was used to it.
But I realized very late it was already time to post about the challenge and I did everything on 27th, in the afternoon. One of my daughter-in-law helped me and I really needed a hand, it was late and we did not have much time!
All my boys coming in and out the kitchen and seeing us so busy with such wonderful and delicious things, were asking why and who for was the cake, wondering which birthday was in calendar, trying to grab something to taste and making me scream all the time to run away quichly from the kitchen or I would have beaten their bottom with a wooden spoon!
And finally we did it! Pictures are not the best but it was late, sunset time and light not so bright ... but our pièce montée was very, very, very good indeed!
I used chocolate pastry cream for filling, chocolate glaze to assemble and on top of pate à choux and granulated sugar to garnish ... I would have liked to garnish the pièce montée with caramel but I didn't feel very comfortable with it, was in a hurry and did not have time enough to get confident, just able to shape a little star ... but that will be my summer homework, practicing with caramel decorations!
I would have liked to garnish with rose blossoms but a terrible storm in the afternoon spoiled most all flowers, just gathered some pale pink petals of my ClairMatin and a few red roses.

Preparation time: You will want to use your puff pastry batter and chocolate glaze or caramel as soon as it has been prepared and as close to serving time as possible. This is not a dessert that stores well and it may be a bit temperamental in humid areas as the glaze needs to harden to hold the choux together. The crème patissiere can be made a couple of days in advance and stored in the fridge until ready to use.
You will need approximately 10 minutes to prepare the puff pastry, 10 minutes to pipe and about 30 minutes to bake each batch. The crème patissiere should take about 10 minutes to cook and then will need to be cooled for at least 6 hours or overnight. The glazes take about 10 minutes to prepare.


Equipment required:
 
• several baking sheets
• parchment paper
• a whisk
• a pastry brush (for the egg wash)
• a pastry bag and tip (a plain tip or no tip is best for piping the puff pastry; you can use a plain or star tip to fill the puff pastry with the cream)
• a flat surface such as a baking sheet or cake board/stand on which to assemble your piece montée
• some of the items you may want to use to decorate your piece montée include ribbons, Jordan almonds, fresh flowers, sugar cookie cut-outs, chocolates, etc.

Ingredients:

For the Vanilla Crème Patissiere (Half Batch)
 
1 cup (225 ml.) whole milk
2 Tbsp. cornstarch
6 Tbsp. (100 g.) sugar
1 large egg
2 large egg yolks
2 Tbsp. (30 g.) unsalted butter
1 Tsp. Vanilla

Dissolve cornstarch in ¼ cup of milk. Combine the remaining milk with the sugar in a saucepan; bring to boil; remove from heat.
Beat the whole egg, then the yolks into the cornstarch mixture. Pour 1/3 of boiling milk into the egg mixture, whisking constantly so that the eggs do not begin to cook.
Return the remaining milk to boil. Pour in the hot egg mixture in a stream, continuing whisking.
Continue whisking (this is important – you do not want the eggs to solidify/cook) until the cream thickens and comes to a boil. Remove from heat and beat in the butter and vanilla.
Pour cream into a stainless steel/ceramic bowl. Press plastic wrap firmly against the surface. Chill immediately and until ready to use.

For Chocolate Pastry Cream (Half Batch Recipe):
 
Bring ¼ cup (about 50 cl.) milk to a boil in a small pan; remove from heat and add in 3 ounces (about 80 g.) semisweet chocolate, finely chopped, and mix until smooth. Whisk into pastry cream when you add the butter and vanilla.

For Coffee Pastry Cream (Half Batch recipe)
 
Dissolve 1 ½ teaspoons instant espresso powder in 1 ½ teaspoons boiling water. Whisk into pastry cream with butter and vanilla.

Pate a Choux (Yield: About 28)
 
¾ cup (175 ml.) water
6 Tbsp. (85 g.) unsalted butter
¼ Tsp. salt
1 Tbsp. sugar
1 cup (125 g.) all-purpose flour
4 large eggs
For Egg Wash: 1 egg and pinch of salt

Pre-heat oven to 425◦F/220◦C degrees. Line two baking sheets with parchment paper.

Preparing batter:
 
Combine water, butter, salt and sugar in a saucepan over medium heat. Bring to a boil and stir occasionally. At boil, remove from heat and sift in the flour, stirring to combine completely.
Return to heat and cook, stirring constantly until the batter dries slightly and begins to pull away from the sides of the pan.
Transfer to a bowl and stir with a wooden spoon 1 minute to cool slightly.
Add 1 egg. The batter will appear loose and shiny. As you stir, the batter will become dry-looking like lightly buttered mashed potatoes.
It is at this point that you will add in the next egg. Repeat until you have incorporated all the eggs.

Piping:
 
Transfer batter to a pastry bag fitted with a large open tip (I piped directly from the bag opening without a tip). Pipe choux about 1 inch-part in the baking sheets. Choux should be about 1 inch high about 1 inch wide.
Using a clean finger dipped in hot water, gently press down on any tips that have formed on the top of choux when piping. You want them to retain their ball shape, but be smoothly curved on top. Brush tops with egg wash (1 egg lightly beaten with pinch of salt).

Baking:
 
Bake the choux at 425◦F/220◦C degrees until well-puffed and turning lightly golden in color, about 10 minutes.
Lower the temperature to 350◦F/180◦C degrees and continue baking until well-colored and dry, about 20 minutes more. Remove to a rack and cool. Can be stored in a airtight box overnight.
Filling:

When you are ready to assemble your piece montée, using a plain pastry tip, pierce the bottom of each choux. Fill the choux with pastry cream using either the same tip or a star tip, and place on a paper-lined sheet. Choux can be refrigerated briefly at this point while you make your glaze.
Use one of these to top your choux and assemble your piece montée.

Chocolate Glaze:
 
8 ounces/200 g. finely chopped chocolate (use the finest quality you can afford as the taste will be quite pronounced; I recommend semi-sweet)

Melt chocolate in microwave or double boiler. Stir at regular intervals to avoid burning. Use the best quality chocolate you can afford. Use immediately.


Hard Caramel Glaze:
 
1 cup (225 g.) sugar
½ teaspoon lemon juice

Combine sugar and lemon juice in a saucepan with a metal kitchen spoon stirring until the sugar resembles wet sand. Place on medium heat; heat without stirring until sugar starts to melt around the sides of the pan and the center begins to smoke. Begin to stir sugar. Continue heating, stirring occasionally until the sugar is a clear, amber color. Remove from heat immediately; place bottom of pan in ice water to stop the cooking. Use immediately.


Assembly of your Piece Montée
 
You may want to lay out your unfilled, unglazed choux in a practice design to get a feel for how to assemble the final dessert. For example, if making a conical shape, trace a circle (no bigger than 8 inches) on a piece of parchment to use as a pattern. Then take some of the larger choux and assemble them in the circle for the bottom layer. Practice seeing which pieces fit together best.
Once you are ready to assemble your piece montée, dip the top of each choux in your glaze (careful it may be still hot!), and start assembling on your cake board/plate/sheet. Continue dipping and adding choux in levels using the glaze to hold them together as you build up. (You may want to use toothpicks to hold them in place – see video below).

When you have finished the design of your piece montée, you may drizzle with remaining glaze or use ribbons, sugar cookie cut-outs, almonds, flowers, etc. to decorate. Have fun and enjoy! Bon appétit!

March DB's Challenge - Orange Tian

Il dolce scelto da Jennifer di
Chocolate Shavings per la sfida di marzo delle Daring Bakers è l'Orange Tian ispirata alla ricetta della Scuola di Cucina di Alain Ducasse a Parigi.
Il dolce è a vari strati: pasta sablée ricoperta di marmellata di arance, panna montata aromatizzata all'arancia, spicchi di arancia fresca, il tutto servito con una salsa al caramello e arancia. Si crea il dessert al contrario per poi rigirarlo e sformarlo dallo stampo in modo che lo strato inferiore (gli spicchi di arancia) diventa lo strato superiore. Qui un articolo che racconta cosa è una Tian.
La pasta sablée e la marmellata di arance possono essere fatte in anticipo, gli spicchi di arancia e la salsa al caramello il giorno prima in modo che poi è facile e veloce assemblare il dessert il giorno dell'utilizzo.

Pasta sablée:
2 tuorli di uova medie a temperatura ambiente
80 g di zucchero semolato
½ cucchiaino di estratto di vaniglia
100 g di burro salato, congelato a cubetti
2 g di sale
200 g di farina 00
1 cucchiaino di lievito in polvere = 4 g
- Mettere la farina, il lievito, il burro ghiacciato e il sale nel robot.
- In una ciotola separata, unire i tuorli, l'estratto di vaniglia e lo zucchero e battere con una frusta finché il composto cambia colore e diventa pallido. Versarlo quindi nel frullatore.
- Impastare velocemente finchè il composto si amalgama. Se l'impasto risultasse ancora un po' troppo friabile aggiungere qualche goccia di acqua (io l'ho fatto) e amalgamare per formare una palla di impasto omogenea. Formare un disco, coprire con pellicola trasparente e lasciate riposare in frigo per 30 minuti. Preriscaldare il forno a 170 ° C.
- Stendere la pasta su una superficie leggermente infarinata a circa 1 cm di spessore di spessore.
- Con il tagliabiscotti tagliare dei cerchi di pasta e disponrli su carta forno. Cuocere per 10/15 minuti, dipende dalla grandezza, o fino a doratura (le mie erano un po' troppo cotte).
Orange Marmalade: io ho seguito questa ricetta, ma di seguito le istruzioni di Jennifer:
100 g di spremuta di arancia fresca
1 arancia grande da tagliare a fette
acqua fredda per cuocere le fette di arancia
5 g di pectina
zucchero semolato: lo stesso peso delle fette di arancia una volta cotte
- Tagliare l'arancia a fettine. Mettere le fette in una pentola di medie dimensioni e riempire con acqua fredda. Cuocere per circa 10 minuti, eliminare l'acqua, riempire di nuovo con acqua fredda e sbollentare le arance per altri 10 minuti.
- Sbollentare le fette di arancia 3 volte. Questo processo elimina l'amaro della buccia, quindi è indispensabile utilizzare sempre acqua fredda pulita ogni volta che si sbollenta. Lasciarle raffreddare.
- Una volta fredde, tritarle finemente (con un coltello o un robot da cucina).
- Pesare le fette e utilizzare la stessa quantità di zucchero semolato. Si possono anche mettere in una tazza ed utilizzare la stessa quantità di zucchero fino dove arrivano le arance.
- Mettere le fette di arancia in un tegame a fuoco medio, con lo zucchero, il succo di arancia e la pectina. Cuocere fino a quando il composto raggiunge una consistenza marmellatosa, circa 15 minuti.
- Trasferire in una ciotola, coprire con pellicola trasparente e porre in frigorifero.
Spicchi di arancia:
- Pelare le arance al vivo le arance e tagliarle in spicchi raccogliendo il succo in una ciotola.
- Per avere aiuto seguire questo video su YouTube.
- Con tutto le bucce rimaste ho fatto le scorze candite.
Caramello:
200 g di zucchero semolato
400 g di succo di arancia
- Mettere lo zucchero in una pentola a fuoco medio.
- Quando lo zucchero si è sciolto e inizia a caramellare, lentamente aggiungere il succo di arancia. Il succo freddo tenderà a raggrumare lo zucchero caldo ma continuando a cuocere a fuoco basso e mescolando si riscioglierà. Non appena il composto inizia a bollire, togliere dal fuoco e versare la metà della miscela sugli spicchi di arancia.
- Conservare l'altra metà di caramello in una ciotola, verrà utilizzato in seguito come decorazione sul dessert finito. Poco prima di servire il dessert, rimettere il caaramello su fuoco vivace per farlo addensare, circa 10 minuti.
Panna montata:
200 g di panna fresca
3 cucchiai di acqua calda
1 cucchiaino o un foglio di gelatina
1 cucchiaio di zucchero a velo
1 cucchiaio di marmellata di arance (vedi ricetta precedente)
- In una piccola ciotola, sciogliere la gelatina e acqua calda, mescolando bene fino a quando ben sciolta. Se si usa il foglio di colla dipesce, prima ammollarlo in acqua fredda per qualche minuto quindi scioglierlo in acqua bollente. Lasciare raffreddare la gelatina a temperatura ambiente, mentre si monta la panna.
- In una ciotola raffreddata iniziare a montare la panna a bassa velocità fino a quando la crema comincia ad addensare. Aggiungere lo zucchero a velo. Aumentare la velocità a medio-alta. Quando la panna inizia a montare bene aggiungere la gelatina raffreddata lentamente continuando a montare finchè la crema sarà leggera e soffice.
- Trasferire la panna in una ciotola e delicatamente unire la marmellata di arance.
Assemblaggio del dolce:

- Assicurarsi che ci sia spazio per un vassoio/teglia nel congelatore.
- Ricoprire un piccolo vassoio o una teglia con carta da forno. Disporre 6 coppapasta.
- Scolare gli spicchi di arancia su carta da cucina.
- Avere la marmellata, la panna montata e la pasta sablée alla mano pronti per l'uso.
- Disporre gli spicchi di arancia sul fondo di ogni coppapasta. Assicurarsi che siano tutti ben vicini e senza spazi tra di loro. Disporli per bene perchè saranno la parte superiore del dessert, come si farebbe con le mele quando si fa una torta di mele.
- Ricoprire con un paio di cucchiai di panna montata e delicatamente spalmarla uniformemente con una spatola,lasciando mezzo centimetro di spazio per il biscotto di pasta sablée.
- Spalmare un piccolo strato di marmellata di arance su ogni biscotto.
- Posare attentamente un biscotto su ogni anello (il lato ricoperto di marmellata a contatto con la panna montata). Premere delicatamente per compattare il dolce.
- Far riposare i dolci nel congelatore per 10 minuti.
- Con l'aiuto di un piccolo coltello, andare intorno ai bordi del coppapasta per facilitare l'estrazione dello stampo. Sistemare il piatto di portata sopra un dessert (a contatto del biscotto) e capovolgere velocemente. Rimuovere delicatamente il coppapasta, aggiungere un cucchiaio di salsa al caramello e servire subito.

Si possono fare tians di ogni forma, anche una unica grande, e gusto, cambiando la frutta e il caramello aromatizzato. Penso che potrebbe essere carino per una cena presentare un vassoio di tante tians di gusti e colori diversi, così che ognuno può scegliere la favorita.

March DB's Challenge - Orange Tian

The 2010 March Daring Baker’s challenge was hosted by Jennifer of Chocolate Shavings. She chose Orange Tian as the challenge for this month, a dessert based on a recipe from Alain Ducasse’s Cooking School in Paris.
The dessert is made of different layers: a pate sablée with orange marmalade, a flavored whipped cream topped with fresh orange segments and served with a caramel and orange sauce. You build the dessert upside down and then unmold the dessert so that the bottom layer (the orange segments) becomes the top layer.

Pate sablée and orange marmalade can be made in advance, orange segments and caramel sauce the day before so it will be easy and quick to assemble the tian when you need the dessert.

Pate Sablée:

2 medium-sized egg yolks at room temperature
6 tablespoons granulated sugar + 1 teaspoon = 80 g
½ teaspoon vanilla extract
¼ cup + 3 tablespoons unsalted butter = 100 g, ice cold and cubed
1/3 teaspoon salt = 2 g
1.5 cup + 2 tablespoons all-purpose flour = 200 g
1 teaspoon baking powder = 4 g

- Put the flour, baking powder, ice cold cubed butter and salt in a food processor fitted with a steel blade.
- In a separate bowl, add the eggs yolks, vanilla extract and sugar and beat with a whisk until the mixture is pale. Pour the egg mixture in the food processor.
- Process until the dough just comes together. If you find that the dough is still a little too crumbly to come together, add a couple drops of water and process again to form a homogenous ball of dough. Form into a disc, cover with plastic wrap and leave to rest in the fridge for 30 minutes. Preheat your oven to 350°F/170°C.
- Roll out the dough onto a lightly floured surface until you obtain a ¼ inch thick circle.
- Using your cookie cutter, cut out circles of dough and place on a parchment (or silicone) lined baking sheet. Bake for 20 minutes or until the circles of dough are just golden (mine were a little bit too much).

Orange Marmalade - I followed this recipe, but below Jennifer's instructions:

¼ cup + 3 tablespoons freshly pressed orange juice = 100 g
1 large orange used to make orange slices
cold water to cook the orange slices
5 g pectin
granulated sugar: use the same weight as the weight of orange slices once they are cooked

- Finely slice the orange. Place the orange slices in a medium-sized pot filled with cold water. Simmer for about 10 minutes, discard the water, re-fill with cold water and blanch the oranges for another 10 minutes.
- Blanch the orange slices 3 times. This process removes the bitterness from the orange peel, so it is essential to use a new batch of cold water every time when you blanch the slices.
- Once blanched 3 times, drain the slices and let them cool.
- Once they are cool enough to handle, finely mince them (using a knife or a food processor).
- Weigh the slices and use the same amount of granulated sugar . If you don’t have a scale, you can place the slices in a cup measurer and use the same amount of sugar.
- In a pot over medium heat, add the minced orange slices, the sugar you just weighed, the orange juice and the pectin. Cook until the mixture reaches a jam consistency (10-15 minutes).
- Transfer to a bowl, cover with plastic wrap and put in the fridge.

Orange Segments:

- Cut the oranges into segments over a shallow bowl and make sure to keep the juice. Add the segments to the bowl with the juice.
- Follow this YouTube video for help.
- With all discharged zest I made candied oranges.

Caramel:

1 cup granulated sugar = 200 g
1.5 cups + 2 tablespoons orange juice = 400 g

- Place the sugar in a pan on medium heat and begin heating it.
- Once the sugar starts to bubble and foam, slowly add the orange juice. As soon as the mixture starts boiling, remove from the heat and pour half of the mixture over the orange segments.
- Reserve the other half of the caramel mixture in a small bowl — you will use this later to spoon over the finished dessert. When the dessert is assembled and setting in the freezer, heat the kept caramel sauce in a small saucepan over low heat until it thickens and just coats the back of a spoon (about 10 minutes). You can then spoon it over the orange tians.

Whipped Cream:

1 cup heavy whipping cream = 200 g
3 tablespoons of hot water
1 tsp Gelatine
1 tablespoon of confectioner's sugar
1 tablespoon orange marmalade (see recipe above)

- In a small bowl, add the gelatine and hot water, stirring well until the gelatine dissolves. Let the gelatine cool to room temperature while you make the whipped cream.
- Combine the cream in a chilled mixing bowl. Whip the cream using a hand mixer on low speed until the cream starts to thicken for about one minute. Add the confectioner sugar. Increase the speed to medium-high. Whip the cream until the beaters leave visible (but not lasting) trails in the cream, then add the cooled gelatine slowly while beating continuously. Continue whipping until the cream is light and fluffy and forms soft peaks.
- Transfer the whipped cream to a bowl and fold in the orange marmalade.

Assembling the dessert:

- Make sure you have some room in your freezer. Ideally, you should be able to fit a small baking sheet or tray of desserts to set in the freezer.
- Line a small tray or baking sheet with parchment paper or a silicone sheet. Lay out 6 cookie cutters onto the parchment paper/silicone.
- Drain the orange segments on a kitchen towel.
- Have the marmalade, whipped cream and baked circles of dough ready to use.
- Arrange the orange segments at the bottom of each cookie cutter. Make sure the segments all touch either and that there are no gaps. Make sure they fit snuggly and look pretty as they will end up being the top of the dessert. Arrange them as you would sliced apples when making an apple tart.
- Once you have neatly arranged one layer of orange segments at the bottom of each cookie cutter, add a couple spoonfuls of whipped cream and gently spread it so that it fills the cookie cutter in an even layer. Leave about 1/4 inch at the top so there is room for dough circle.
- Using a butter knife or small spoon, spread a small even layer of orange marmalade on each circle of dough.
- Carefully place a circle of dough over each ring (the side of dough covered in marmalade should be the side touching the whipping cream). Gently press on the circle of dough to make sure the dessert is compact.
- Place the desserts to set in the freezer to set for 10 minutes.
- Using a small knife, gently go around the edges of the cookie cutter to make sure the dessert will be easy to unmold. Gently place your serving plate on top of a dessert (on top of the circle of dough) and turn the plate over. Gently remove the cookie cutter, add a spoonful of caramel sauce and serve immediately.

February DB's Challenge - Tiramisu

The February 2010 Daring Bakers’ challenge was hosted by Aparna of My Diverse Kitchen and Deeba of Passionate About Baking. They chose Tiramisu as the challenge for the month. Their challenge recipe is based on recipes from The Washington Post, Cordon Bleu at Home and Baking Obsession.

The great real challenge was about making homemade savoiardi (ladyfingers) and mascarpone. I had no problem with both recipes, ladyfingers came out just like they should be and mascarpone was well thick and gorgeous, much more than the first time I made it on my own for another tiramisu recipe, but I left it a whole day and night in the fridge to thicken.

The cream used for this tiramisu is a mix of zabaglione, pastry cream, mascarpone and whipped cream. You should need to schedule all the things to do, planning time for baking cookies, chilling mascarpone and creams.

Well, it's a great tiramisu, but perhaps too much rich and sweet for our taste. My family likes the simplest version with cream made only with eggs, sugar and mascarpone.

Zabaglione:

2 large egg yolks
3 tablespoons sugar/50gms
1/4 cup/60ml Marsala wine (or port or coffee or Prosecco for a delicate taste)
1/4 teaspoon/ 1.25ml vanilla extract
1/2 teaspoon finely grated lemon zest

Heat water in a double boiler. If you don’t have a double boiler, place a pot with about an inch of water in it on the stove. Place a heat-proof bowl in the pot making sure the bottom does not touch the water.
In a large mixing bowl (or stainless steel mixing bowl), mix together the egg yolks, sugar, the Marsala (or espresso/ coffee), vanilla extract and lemon zest. Whisk together until the yolks are fully blended and the mixture looks smooth.
Transfer the mixture to the top of a double boiler or place your bowl over the pan/ pot with simmering water. Cook the egg mixture over low heat, stirring constantly, for about 8 minutes or until it resembles thick custard. It may bubble a bit as it reaches that consistency.
Let cool to room temperature and transfer the zabaglione to a bowl. Cover and refrigerate at least 4 hours or overnight, until thoroughly chilled.

Pastry Cream:

1/4 cup/55gms sugar
1 tablespoon/8gms all purpose flour
1/2 teaspoon finely grated lemon zest
1/2 teaspoon/ 2.5ml vanilla extract
1 large egg yolk
3/4 cup/175ml whole milk

Mix together the sugar, flour, lemon zest and vanilla extract in a medium heavy-bottomed saucepan. To this add the egg yolk and half the milk. Whisk until smooth.
Now place the saucepan over low heat and cook, stirring constantly to prevent the mixture from curdling.
Add the remaining milk a little at a time, still stirring constantly. After about 12 minutes the mixture will be thick, free of lumps and beginning to bubble. (If you have a few lumps, don’t worry. You can push the cream through a fine-mesh strainer.)
Transfer the pastry cream to a bowl and cool to room temperature. Cover with plastic film and refrigerate at least 4 hours or overnight, until thoroughly chilled.

If you don't want to find your chilled creams with an awful crust on them make sure to cover with plastic film touching the cream and sealed perfectly to the sides of the bowl: when pulling off the film the cream will be smooth as just done.

Whipped Cream:

1 cup/235ml chilled heavy cream
1/4 cup/55gms sugar
1/2 teaspoon/ 2.5ml vanilla extract

Combine the cream, sugar and vanilla extract in a mixing bowl. Beat with an electric hand mixer or immersion blender until the mixture holds stiff peaks. Set aside.

Assembling the tiramisu:

2 cups/470ml brewed espresso, warmed (I used less)
1 teaspoon/5ml rum extract (optional)
1/2 cup/110gms sugar (I just put a teaspoon as I never do)
1/3 cup/75gms mascarpone cheese
36 savoiardi/ ladyfinger biscuits (you may use less)
2 tablespoons/30gms unsweetened cocoa powder (I prefer grated dark chocolate)

Workings quickly, dip 12 of the ladyfingers in the sweetened espresso, about 1 second per side. They should be moist but not soggy. Immediately transfer each ladyfinger to the platter, placing them side by side in a single row. You may break a lady finger into two, if necessary, to ensure the base of your dish is completely covered.
Spoon one-third of the cream mixture on top of the ladyfingers, then use a rubber spatula or spreading knife to cover the top evenly, all the way to the edges.
Repeat to create 2 more layers, using 12 ladyfingers and the cream mixture for each layer. Clean any spilled cream mixture; cover carefully with plastic wrap and refrigerate the tiramisu overnight.
To serve, carefully remove the plastic wrap and sprinkle the tiramisu with cocoa powder using a fine-mesh strainer or decorate as you please. Cut into individual portions and serve.

Tiramisu Gran Lusso


Zabaglione:

2 tuorli di uova grandi
3 cucchiai di zucchero
60 ml di vino Marsala (o Porto o caffè o Prosecco per un gusto più delicato)
1/4 di cucchiaino di estratto di vaniglia
mezzo cucchiaino di scorza di limone grattugiata finemente

- Scaldare 4 dita di acqua in una casseruola. I
- Nel frattempo mescolare i tuorli, lo zucchero, il Marsala, l' estratto di vaniglia e la scorza di limone in una bastardella. Sbattere tutto insieme finché i tuorli sono completamente assemblati e la miscela appare liscia.
- Trasferire la bastardella sulla casseruola facendo attenzione che il suo fondo non tocchi l'acqua.
- Cuocere il composto di uova a fuoco basso, mescolando continuamente, per circa 8 minuti o fino a che non addensa bene.
- Lasciare raffreddare a temperatura ambiente, trasferire lo zabaglione in una ciotola, coprire e conservare in frigorifero per almeno 4 ore o meglio tutta la notte.

Crema Pasticcera:

55 g di zucchero
1 cucchiaio di farina
mezzo cucchiaino di scorza di limone finemente grattugiata
mezzo cucchiaino di estratto di vaniglia
1 tuorlo d'uovo grande
175 ml di latte intero

- Mescolare lo zucchero, la farina, la scorza di limone e l'estratto di vaniglia in una pentola a fondo spesso. Aggiungere il tuorlo d'uovo e la metà del latte. Mescolare bene la crema fino a che diventa liscia.
- Mettere la pentola a fuoco basso e cuocere, mescolando continuamente per evitare che faccia grumi.
- Aggiungere il resto del latte poco per volta, sempre mescolando. Dopo circa 12 minuti il composto sarà denso, privo di grumi e comincerà a fare qualche bolla. (Non preoccuparsi se c'è ancora qualche grumo, si può passare la crema attraverso un colino a maglie fini).
- Trasferire la crema pasticcera in una ciotola e lasciare raffreddare a temperatura ambiente. Coprire con pellicola trasparente e conservare in frigorifero per almeno 4 ore o meglio tutta la notte.

Per evitare che si formi una crosta antipatica sulle creme, coprire con la pellicola fino toccare la crema e sigillare la pellicola perfettamente ai lati della ciotola: quando si togliarà la crema sarà liscia come appena fatta .

Panna montata:

235 ml di panna fresca da montare ben fredda
55 g di zucchero cup
mezzo cucchiaino di estratto di vaniglia
Unire la panna, lo zucchero e l'estratto di vaniglia in una terrina. Montare con un frullino elettrico. Mettere da parte.

Assemblaggio del tiramisu:

470 ml di caffè caldo (io ne ho usato meno)
1 cucchiaio di rum (facoltativo)
110 g zucchero (ne ho messo giusto un cucchiaino, ma di solito evito anche quello)
75 g di mascarpone
36 savoiardi (o anche meno)
2 cucchiai di cacao amaro (io preferisco cioccolato fondente grattugiato)

- Intingere brevemente 12 savoiardi nel caffè, circa 1 secondo per lato. Essi dovranno essere umidi ma non fradici.
- Trasferirli ordinatamente nella vaschetta. Si può rompere un biscotto in due, se necessario, per non lasciare spazi vuoti.
- Coprire con un terzo della crema al mascarpone.
- Ripetere per creare altri 2 strati (ma comunque la cosa è molto soggettiva).
- Coprire con pellicola e conservare in frigorifero il tiramisù tutta la notte.
- Prima di portarlo in tavola, rimuovere con delicatezza la pellicola e cospargere il tiramisù con il cacao in polvere atttraverso con un colino o decorare a piacere. Tagliare in porzioni individuali e servire.
