Ricci di patate con cotechino (ma non solo) e lenticchie per gli auguri più prosperosi! - MLLA # 31


Ecco, ci siamo ... anche questo lungo e faticoso anno è finito e tra poche ore si brinderà all'arrivo di quello nuovo. Tanti anni fa un film fantascientifico favoleggiava sulla grande Odissea nello spazio degli anni 2000, che sembravano remoti anni luce ... ora è già trascorso un decennio di questo nuovo millennio, il progresso industriale e tecnologico corre a passi da gigante (forse troppi!), ma l'uomo ominide pare rinchiudersi sempre più in se stesso e, spinto da mille timori e paure per il domani, sopravvivere in un mondo emotivo sempre più arido ... mah, sarà forse la malinconia per l'anno che se ne va (e uno in più che si aggiunge sulla carta d'identità!) che ci ferma un attimo a riflettere, prendere atto delle nostre mancanze passate e proporci nuovi impegni e buoni propositi da perseguire nel nuovo anno.
E non saràsicuramente una mancanza se stasera e/o domani non ci negheremo una manciata di lenticchie, da sempre considerate di buon augurio e portatrici di probabili ricchezze economiche!
Ve le offro anch'io, augurando a tutti gli affezionati che passano di qua di portarsene via un pochine, e che in ognuna di esse possiate trovare un sogno realizzato, un desiderio esaudito, una fantasia diventare realtà!
Lenticchie, come da tradizione, abbinate al più classico cotechino e all'immancabile puré di patate, ma da un'idea di Gianfranco delle Tamerici, proposta al suo Buffet delle feste, trasformate in un simpatico riccio benaugurale.

Per 8/10 persone:

600 g di patate
30 g di burro
1 uovo
sale/pepe

Lessare le patate, passarle nello schiacciapatate, rimetterle sul fuoco in una casseruola e farle asciugare a fuoco dolce. Aggiungere il burro e farlo mantecare, poi, fuori dal fuoco, aggiungere anche l'uovo. Salare e pepare e far raffreddare.

Ripieno:

1 cotechino lessato * o gorgonzola per chi segue un regime vegetariano
150 g di lenticchie lessate *
50 g di carota, sedano, cipolla tritati
olio extravergine di oliva
sale/pepe

* ottimi anche gli avanzi

- Rosolare il trito di verdure in un filo di olio, unire le lenticchie e far insaporire, poi salare e pepare. Infine aggiungere il cotechino a cubetti.
- Foderare degli stampini semisferici (non avendoli ho usato delle ciotoline in ceramica) con la pellicola, mettere un po' di puré di patate e con un cucchiaio bagnato (ma anche le dita inumidite funzionano) sistemarlo bene sulle pareti.
- Farcire con il ripieno di lenticchie e cotechino (oppure lenticchie e un pezzo di gorgonzola nel centro) e chiudere con altro puré di patate (coprire con pellicola se fatti in anticipo e conservarli in frigo).
- Capovolgere delicatamente il riccio su una teglia rivestita di carta forno, levare la pellicola e decorare con le lamelle di mandorle (ho messo due bacche di ginepro per fare gli occhi). Volendo si può cercare di sagomare con le dita umide leggermente a punta il musetto del riccio. Cuocere a 190° per 15/20 minuti.
- Servire su un letto di spinaci appena saltati in padella in un filo di olio.

Potatoe hedgehogs with cotechino (gorgonzola) and lentils


Here we are ... a long and tiring year is ending in a few hours and a brand new is pretty knocking at the door. Many years ago a science fiction movie was telling about the great Space Odyssey of the 2000s, which seemed so light years ahead ... but we have already spent a decade of this new millennium, the industrial and technological advances run so fast (perhaps too much!), but the man hominid seems increasingly withdraws in himself and, due to so many fears about the future, survive in a more and more arid emotional world ... well, it may be the sadness for the year that's going (and one more adding on the ID card!) that makes you stop a moment to think, to keep aware of your past failures and propose new commitments and good intentions to be pursued in the new year.
And of course anybody won't miss, tonight and/or tomorrow, or regret a handful of lentils, always considered a positive talisman for good luck and economic wealth!
I thankfully offer them to you, wishing all my fans to take away a little: and might each single lentil be a dream come true, a wish come true, a fantasy come true!
In Italy lentils are traditionally combined with the most popular festive pork sausage cotechino and mashesd potatoes, but for this vegan MLLA # 30 they can be nicely served with
gorgonzola cheese, it will melt in the inside end give a creamy appeal to the cute curly surprising hedgehog.

Serving 8/10:

600 g potatoes
30 g butter
1 egg
salt/pepper

Boil potatoes, smash in the potato masher, put them back in a saucepan and let them dry a bit on low heat. Add butter and stir, then remove from the heat, add the egg. Season with salt and pepper and let cool.

Filling:

1 cotechino * or gorgonzola cheese for vegetarians
150 g boiled lentils *
50 g finely chopped carrot, celery, onion
extravirgin olive oil
salt/pepper

* leftovers will be ok

- Fry chopped vegetables in a little oil, add lentils and cook a little bit, then add salt and pepper. (Combine with sausage cut into small cubes).
- Line small hemispherical molds with plastic wrap (I used small pottery bowls), put a little mashed potatoes and place it well on sides, helping with a wet spoon or wet fingers.
- Fill with (sausage and lentils stuffing) some lentils, add a piece of gorgonzola in the middle, cover with lentils again and top over with more mashed potatoes (cover with plastic wrap if made in advance and store in refrigerator).
- Gently turn each hedgehog on a baking tray (lined with parchment paper), take off plastic wrap and decorate with the sliced almonds (I put 2 juniper berries as eyes). You can try to shape with wet fingers the snout of the hedgehog. Bake at 190° for 15-20 minutes.
- Serve on sautéed spinach.

Just a note, though: Gorgonzola is NOT vegetarian. It contains animal rennet derived from the ripped out and blended stomach of a calf. Vegetarians have to substitute with a microbial-rennet blue cheese.
