Yes we bake - World Bread Day 2009 - Freselle




Oggi giornata mondiale del pane: World Day Bread, evento ideato e organizzato da Zorra, arrivato grandiosamente alla sua 4° edizione.
Il tema è libero: si può preparare un pane con o senza lievito, con il lievito naturale, sperimentare nuovi tipi di farina, aggiungere dei semini ... tutto ciò che libera la propria fantasia!
L'anno scorso avevo presentato l'impasto semidolce delle Simili, un jolly col quale sbizzarrirsi in molteplici preparazioni: panini semidolci - parmigianini - torta belga o fiamminga - panini semidolci ai wurstel - panettone gastronomico. Qui in casa mia va alla grande!
Quest'anno un'altra ricetta, sempre targata Simili, che riscuote molto successo e che mi permette di avere sempre pronto qualcosa di panoso da trasformare in antipasto, secondo, spuntino, merenda ... insomma, un altro jolly!
Le freselle sono una specialità tipica della Campania, Calabria e Puglia. Si può dire che siano un pane povero in tutti i sensi, non è condito, richiede solo acqua, farina e pasta madre, che conferisce genuinità e le rende inconfondibili.
Sono facili da fare e si mantengono a lungo, per mesi interi, in una scatola ermetica o in un sacchetto ben chiuso. Essendo già secche non c'è pericolo che vadano a male.
Una volta erano l'alimento base dei marinai quando dovevano trascorrere molto tempo in mare, ne portavano così a bordo grandi scorte, le legavano poi a una cima con un peso finale per immergerle nell'acqua del mare: in questo modo le avevano belle inzuppate e salate in un colpo solo!
Il modo migliore per gustarle è passarle velocemente sotto l'acqua fredda dalla parte del taglio,sgocciolarle, condirle con un filo di olio e poi farcirle con quello che più piace. Il classico abbinamento pomodori, origano/basilico e mozzarella la fa da padrone, e richiama tanto un che di patriottico nei colori.
Possono essere abbinate a caponate, peperonate, gurguglione, ratatouille, salsa verde, ragù o sughi saporiti: ma anche qualsiasi "avanzo" di verdure può essere facilmente riciclato e insaporito con una spolverata di formaggio.

Ecco la ricetta:
1° rinfresco:
65 gr. di lievito madre
75 gr. di farina di forza
40 gr. di acqua

Amalgamare bene gli ingredienti, fare una palla e lasciare riposare 3 ore in ciotola coperta.

2° rinfresco:
180 gr.di lievito madre (cioè tutto l'impasto precedente)
90 gr. di farina di forza
45 gr. di acqua

Amalgamare bene gli ingredienti, fare una palla e lasciare riposare 3 ore in ciotola coperta.

Impasto:
315 gr. di pasta madre (cioè tutto l'impasto precedente)
850 gr. di farina di forza
500 gr. circa di acqua
25 gr. sale fino

- Impastare a mano o nell'impastatrice a lungo e battendo finchè l'impasto risulterà molto elastico, fare una palla e lasciare riposare coperto a campana per trenta minuti.
- Dividere l'impasto in pezzi da 150gr. circa e far dei filoncini lunghi circa 15 cm., lasciare riposare coperti 15 minuti.
- Sotto i palmi delle mani allungare i filoncini fino a 30 cm., chiuderli a ciambella cercando di lasciare un buco molto largo.
- Foderare le teglie con alluminio, disporre le ciambelle distanziate, coprire con carta scottex umida e lasciar riposare tutta la notte (8/12 ore) in un luogo caldo, io le metto nel forno spento.
- E' probabile che la carta asciughi durante la notte, basterà inumidirla delicatamente con un pennello e con altrettanta delicatezza staccarla dalle frese lievitate. In alternativa si può usare la carta semioleata alimentare che usano i salumieri per il prosciutto.
- Cuocere in forno caldo a 200°per 10/12 minuti, non devono scurire ma rimanere bianche.
- Farle raffreddare, tagliarle a metà, rimetterle sulla teglia con il taglio verso l'alto, e tostarle in forno a 170/180° per 30 minuti, abbassando poi a 140° per altri 30 minuti.
- Si mantengono per mesi in una scatola a chiusura ermetica.

Yes, we bake!

Today is 4th Years' Anniversary of World Bread Day, a fantasmagoric worldwide event created by Zorra.
I can hardly imagine how many breads would be baked and shared all together in this day!
Open theme and we will have so many different, peculiar, international breads to admire in the round up that I am sure everybody will be looking forward to see it next weekend!
So ... no more words and back to our ovens, the party is on!

Last year I blogged about a multipurpose dough (we love it very much) that can be developed in so many different and lovely recipes: panini semidolci - parmigianini - torta belga o fiamminga - panini semidolci ai wurstel - panettone gastronomico. But I have now realized that I did not write English version (and I am wondering why?), I will add it as soon as possible, promised!
This year I am posting a nice recipe about a typical Italian bread you can use in several occasions (lunch, dinner, snack, appetizer) just changing what you add on top. Easy, practical, chip and more than that good!

Freselle have originated in Campania, Calabria and Puglia, regions in South Italy. They are a poor bread in all senses, no flavor or aroma in them, only water, flour and sourdough which gives a touch of authenticity and makes them unmistakable.
They are easy to make and can be stored for long, for several months in a n air-tightened box or a bag strictly closed. Since they are already dry there is no danger they get bad.
Once they were the staple food of sailors when they were suppesed to spend a long time sailing, carrying on board large stocks of them. They used to tie them up to a rope with a weight at the end and dip in the sea: so they had them pretty soggy and salty all at once!
The best way to enjoy them is to pass their cut side quickly under cold water, drain, season with a little oil (lightly rubbed with garlic too if pleased) and then fill with what you like most. The typical combination of tomatoes, oregano/basil and mozzarella is always a success, and for us it reminds of something patriotic in its colors.
Freselle can be matched with caponata, gurguglione, green sauce, ratatouille, ragù or vegetable sauce and flavored with a sprinkle of cheese, still any vegetable "leftover" can be easily recycled on them.

You need:

1st starter:
65 gr. sourdough
75 gr. strong flour
40 gr. water

Mix well all ingredients , make a ball and let rise 3 hours in a covered bowl.

2nd starter:
180 gr sourdough (the whole dough above)
90 gr. strong flour
45 gr. water

Mix well all ingredients , make a ball and let rise 3 hours in a covered bowl.

Final dough:
315 gr. sourdough (the whole dough above)
850 gr. strong flour
500 gr. water
25 gr. salt

- Knead the dough by hand or a long and beating until the dough will be very elastic, make a ball and let rest covered bell for thirty minutes.
- Divide the dough into pieces about 150gr. each and make small rolls about 15 cm long. let rest covered 15 minutes.
- Lengthen the rolls under your palms up to 30 cm., give a donut shape leaving the hole very wide.
- Line the pans with aluminum foil, arrange the donuts leaving speace between them, cover with a damp kitchen paper towel and let rest all night (8/12 hours) in a warm place, I put them in the oven, switched off of course!.
- Paper might dry overnight, just moisten it gently with a brush and more gently remove them from the donuts.
- Bake in preheated oven at 200 ° for 10/12 minutes, should not darken but remain white.
- Let them cool, cut in half, put them back on the pan with the cut up, and toast at 170/180 ° for 30 minutes, then low to 140° for 30 minutes.
- Can be stored for months in an airtight box.
