Cachi e panna - WHB # 312

Non è propiamente una ricetta, ma un banale accostamento di sapori, colori e consistenze che forse così banale non è, semmai è la nuda e cruda semplicità che ancora una volta riesce a stupire ed ingolosire anche i palati più esigenti.
Ho già detto che non amo il caco, più che il suo sapore è proprio la sua consistenza che mi fa rabbrividire sotto ai denti. Però le persone che hanno assaggiato questo bicchierino ne sono rimaste entusiaste subito, in primis il marito (che non è assolutamente di parte, i cazziatoni per le cose scadenti o venute male non mi vengono risparmiati :-), poi le amiche (ecco, queste forse mi vogliono un pochino più di bene :-), poi  gli amici che godono proprio della buona tavola e del buon vino.
Ce ne siamo innamorati quando l'abbiamo gustata (io con gli occhi, l'arancio del caco è coinvolgente, mette di buonumore anche in una giornata grigissima!) quando siamo rientrati dalla Francia dopo il lungo ponte dei morti, ed abbastanza affamati siamo usciti dall'autostrada ad Albissola, il tempo di un incrocio ed un semaforo ed eravamo subito sul lungomare, caldo, assolato e così pacifico nella quiete post estiva, un vicoletto (ma chi ce l'ha indicato lo chiamava budello) e siamo entrati nella Locanda La Familiare (che poi ho scoperto essere un locale consigliato dalla chiocciolina Slow Food), di nome e di fatto, un ambiente veramente curato ed accogliente, servizio perfetto, cibo di più ... per chi fosse in zona, altamente consigliato.

Solo due semplici ingredienti, caco maturo e panna montata rigorosamente non zuccherata.

 Il caco va frullato delicatamente, ma per evitare che magari diventi una poltiglia e cambi consistenza e colore io preferisco passarlo attraverso il setaccio (e finalmente mi sono presa quello apposta per la frutta coi semini), schiacciandolo bene con un cucchiaio (non occore sbucciarlo, basta tirare via la parte superiore verde col picciolo ed aprirlo a metà) o come ha fatto Dodo (quando ne ho dovuti fare tanti :-), schiacciando bene con la mano, indossando un guanto da cucina usa e getta.

La polpa così ottenuta va messa nei bicchierini, che possono essere conservati in frigo ben sigillati fino al momento di servire (o poco prima) quando verrà aggiunta la panna montata. In occasione di pranzi/cene, quindi, si possono preparare il giorno prima.
Guarnizione a piacere: a noi l'hanno servito così, immacolatamente semplice, ma io l'ho servito con una spolverata di amaretti tritati e granella di nocciole, ma potrebbero essere scaglie di cioccolato, granella di pistacchi, meringhette sbriciolate, ecc.

Persimmon & Cream

To tell you the truth, this is not a serious recipe, but a simple combination of flavors, colors and textures that might sound quite trivial and common, but actually bare simplicity once again manages to surprise and get greedy even the most particular palates.
I have already mentioned I am not so fond of persimmons, it's the consistency rather than its taste that makes me shudder in the teeth. But those who have tasted this dessert loved it immediately, first my husband (who is definitely very objective about my kitchen,  if something is wrong or not that good he tells me without any compliment :-), then my dear ladyfriends (they really love me that much:-), then friends that love to stay around with us enjoying good food and good wine. 
We loved it at once when we tasted (I did only with my eyes, the orange of the persimmons is so addictive, can put you in a good mood even in a very grey day!) on our way back from France after a long week-end laast month. We were pretty hungry and got off the highway in Albissola, just a little time for an intersection and a traffic light and we were immediately on the seafront, so warm, sunny and peaceful after the long and crowded summer season, a short walk along a small alley (budello) and we found Trattoria La Familiare (litterally Family Tavern), a very warm and cozy place, perfect service, excellent food ... should you ever been in there, highly recommended.


Only two simple ingredients, very ripe persimmon and strictly unsugared whipped cream .

The persimmon is gently
blended but to avoid a mush texture and color change, I prefer to pass it through the sieve (and I finally bought the special one for fruit, to descard tiny seeds), pressing well with a spoon (no need to peel, just pull off the top with the green stem and cut in half) or as my 4th son Dodo did (He helped me when we had to make a lot :-), pressing well with your hand, wearing a disposable kitchen glove.

Pour the pulp in the glasses, they can be stored in the refrigerator (well sealed). When ready to serve (or a little in advance) just add the whipped cream. If you have to organize a lunch/dinner, they can be prepared a day ahead. 
Garnish at your pleasure: they have been served us so immaculately simple, but I prefer to add a sprinkle of crushed amaretti and chopped hazelnuts, but it could be chocolate chips, chopped pistachios, crushed meringues, etc.
