Insalata di finocchi e arance rosse - WHB # 216

Fa ancora freddo, stamane in montagna era -7°!

- Pulire i finocchi e affettarli finemente.

Fennel and Blood Orange Salad

It is still very cold, this morning in the mountains was -7°! I should have bumped out of my bed and gone skiing with my kids (Christmas rush is over and now for a couple of weeks you can ski pretty well) but I was lazy, so I got a nice coffee and went back to bed, reading food books and magazines. I finally received, (it took 2 months from U.S.A. and it was sent by First Class Mail!), The BloggerAid CookBook, a cookbook by food bloggers from around the world, designed with the intent to raise funds for the"World Food Programme". One of the first recipes I read was Liliana (the same name as my mother) Tommasini's, from My Cookbook Addiction. She lives in Canada but has Italian origins, her mother always telling about nice juicy and red oranges she used to eat in Sicily. To me this recipe reminds what Lilly (but is that name a sign of fate for this recipe?) serves at "Trattoria degli Olivi" of our dear friend Tino (a typical restaurant where you can have the freshest lake fish and with beautiful views over Lake Garda): a slightly warm salad parmesan is replaced by morsels of steamed salmon trout, a true delicacy, and I am so fond of it!.
And then this is the right season to get plenty of oranges and vitamin C.
They contain a high percentage of it, it only takes two a day to give your body what it needs. They are therefore the best defense against the cold season's deseases. They improve the elasticity of the skin and blood vessels. They contain hesperidin and anthocyanins which play a potent anti-inflammatory action. To get the best result you should not eliminate all the white and spongy part beneath the peel. In fact, it contains fiber (pectin) which can hinder the absorption of cholesterol. In addition, this tissue is rich in vitamin P (rutin) which promotes complete assimilation of vitamin C.

insalata finocchi e arance

You need:

2 fennel
3 or 4 blood oranges
(surprise! mine were not, the greengrocer told me a big lie, but color contrast would be better)
4 tablespoons extra virgin olive oil
juice of 2 lemons*
salt/fresh ground black pepper
parmesan shavings

*or you can try with 2 tablespoon of apple vinegar

- Clean fennels, remove the cores and slice thinly.
- Peel oranges, remove pith and slice them.
- In a small bowl whisk together oil, lemon juice, salt and freshly ground black pepper.
- Dress the salad and garnish with parmesan shavings.

About Zagara (orange blossoms) and Wedding
Apparently Juno, when she married Zeus, brought some orange trees as a dowry.
The king of Gods liked them so much and kept them in a private garden where the nymphs Hesperides were the guardians: that's why the fleshy fruit of oranges are named Hesperidium.

There is also an ancient folk tradition that associates orange flowers to wedding. The legend tells that centuries ago the King of Spain received an orange plant as a wedding gift. It was so beautiful and the king was so pleased that he decided to keep it as a treasure. One day an ambassador arrived at court, corrupted the gardener of the king and bought a sprig of the plant for 50 gold coins. The gardener gave that money to his daughter as wedding's dowry. And the daughter, plenty of gratitude to his father for the great gift, put a sprig of orange blossom flowers it between her hair on wedding's day.

You can use orange zest in different ways: dried in the sun or in the oven or candied to flavor and garnish desserts, rub on bags and shoes (and then polishing with a soft cloth) to clean them, still some research conducted at Cornell University have found that they can produce a sort of organic plastic.
Oranges stuck with cloves and hung in closets keep away moths, their pulp applied onto the skin of the face and neck prevents wrinkles.

An old folk belief supposed that oranges consumed in the morning had a reserve of gold, silver in the afternoon and lead in the evening (therefore heavy for the body). All this has been dispelled and we can eat oranges whenever we want. If someone feels a sense of fullness or heaviness it depends exclusively on the microbes that swarm in their intestines. If these are fermentative they will turn orange sugar into gas, as they would with other sweet substance. And even for those suffering from gastritis or ulcer, eating oranges helps digestion!

Ingredienti:

Tequila Puerto Vallarta

Puerto Vallarta was a dreamy little fishing village in Mexico in Mismaloya Bay on the Pacific Coast.
When Hollywood discovered it in early '60 it was the end of the peace for this charming town and its inhabitants. The film city sent beautiful and wild stars like Richard Burton (who brought her soon-to-be wife Elizabeth Taylor to the location causing an enormous attention on the media because of their love affair), Ava Gardner and Deborah Kerr into the idyllic wilderness to shoot the movie "The night of the Iguana", directed by John Huston. A large number of paparazzi was attracted there and the little village turned soon into a world famous tourist attraction.
The actors and artists worked, celebrated and drank the tropical nights away. They transformed the humble little village, forcing their pace of life onto it. Apparently, this drink was invented in Marlon Brando's house (he was not in the cast but supposed there as a friend), on the same day that the wonderful Playa de los Muertos was rechristened the Playa Delicias, the delicious beach, at the request of the stars.

Guacamole

guacamole-tortilla chips

The most typical mexican dipping, originated by the Aztecs.
Principals ingredients are avocados, lime juice, salt and black pepper, but variations are numerous including cherry tomatoes, fresh coriander, garlic, onion, chili.
The word comes from the Mex Spanish AhuacamOlli, meaning Ahuacatl=avocado and molli=dip.
Lime juice is very important: it gives flavor to the sauce and prevents changing color of guacamole (it would soon oxides).

You need:

a ripe avocado*
half small onion
half a clove of garlic
a fresh chilli
some cherry tomatoes
salt/pepper
few leaves of fresh cilantro or parsley
2 tablespoons extra virgin olive oil
lime juice

* a friend of mine taughed me to wrap the avocado in a newspaper to get it ripe

- Halve the avocado, peel and crush 2/3 with a fork, the remaining third cut in small cubes.
- Sprinkle immediately with lime juice.
- Finely slice garlic, onion, chilli, coriander and tomatoes into cubes and add to the sauce.
- Add salt and pepper, oil, mix well and let rest half an hour before serving.

Tortilla chips

tortilla chips

A fragrant snack, perfect with any dip, made with the same dough as tortillas.

You need:

same amount of precooked corn flour and warm water
(but I added a little more water)
a pinch of salt
seed oil for frying

- Mix water, flour and salt and let the dough rest half an hour in a covered bowl.
- Roll a bit of dough at a time in a thin layer, preferably between two sheets of greaseproof paper, and cut into triangles with a wheel (well, the dough is not so perfect and does not work well, it may crackle but don't worry, go ahead, you can knead cuttings again, adding some water drops if necessary).
- Deep-fry in a little oil for a few minutes, drain well on absorbent paper and serve.

Pan de Hojaldre

La ricetta in italiano qui.

Even my dearest sisters are curious and when travelling around they do not miss any opportunity! One day, years ago, Margherita and Valeria were in Valencia and walking along like tourists do they stopped in front of a bakery: in the window there was a wonderful bread that caught their attention.
They immediately went in, soon made friends with the bakers and came home with the recipe, which they then adapted for our domestic ovens.
Pan de Hojaldre means precisely puff bread and their teacher was Don Juan Villanueva of the Avenida del Puerto.

pan de hojaldre - pane sfogliato

I used to make a single loaf, as explained in their book "Sfida al matterello".
But now, even the sisters have reviewed the recipe and prefer to make smaller loaves without a folding passage. Here below both versions, choose your favorite!
A good extra virgin olive oil makes the difference, personally I like to use my new oil, to the last drop!

Making a loaf or two small loaves

Sponge:
50 gr. flour
30 gr. water
2 gr. fresh yeast

Mix all ingredients and let it rise until doubled.

Dough:
250 gr. flour
125 gr. water
half a tablespoon of extra virgin olive oil for the dough
10 gr. fresh yeast
5 gr. salt
30 gr. of extra virgin olive oil to spread inside *

* only 20 gr. if you decide to make two small loaves

Make a well with flour, put water in the middle, dissolve fresh yeast and chopped sponge into it, add oil, start kneading with a little flour, add salt and end up kneading without overworking the dough.

Shape in a loaf of about 20cm. and let it rest on the table for about twenty minutes, covered with a cloth or a bowl.

One loaf

pan de hojaldre - pane sfogliato

1 - Without reworking the dough and on floured working surface, roll it out into a rectangle about 20x50. Spread over
half of 30g. oil (with fingers or a brush) and fold it like this:
2 - from the short side of the rectangle fold to the middle,
3 - the same fold on the other short side toward the center,
4 - fold the two sides on each other. You will now have 4 layers.
5 - Seal edges with fingers not to release the oil, flour the table again and a little bit on the dough that won't stick to rolling pin. Roll out a thin layer of about 60x40 without bothering if a little oil willspread out, it is inevitable.
6 - Grease the dough with remaining oil (2 cm from the edges) and then roll it from the short side without squeezing too hard and trying to raise the dough slightly while rolling in order to keep the oil inside the pastry (it might escape all the way to the end of the pastry).
7 and 8 - Place the roll on a baking tray (covered with baking paper) with the ending part below, make a deep cut with a razor blade, leaving a central space of 3cm and reaching up to a couple of centimeters from the winding side. Brush with a little oil and allow to rise until doubled (usually 1 hour), then bake at 200° for 30/35 minutes.

pan de hojaldre - pane sfogliato

If you bake it in advance, better warm it 3/4 minutes before serving.

Two small loaves

pan de hojaldre - pane sfogliato

1 - Roll out the dough to form a rectangle about 25x35 and cut it in half along the long side.
2 and 3 - Grease pastry with oil and then roll by hand without squeezing starting from the short side and trying to raise the dough slightly while rolling in order to keep the oil inside the roll(it might escape all the way to the end of the pastry).
5 - Place the rolls on a baking tray (covered with baking paper) with the ending part below, make a deep cut with a razor blade up to a couple of centimeters from the ends.
6 - Brush with a little oil and allow to rise until doubled (usually 1 hour), then bake at 200° for 25/30 minutes.

If you bake it in advance, better warm it 3/4 minutes before serving.
