Gingerbread, very British, very old style - WHB # 315

Ecco,  le lunghe vacanze natalizie sono veramente finite, oggi è stata l'ultima giornata di completo relax che mi sono goduta, da domani si ricomincia a rientrare in mentalità (beh, già da stasera, tutti a letto presto che la sveglia sarà molto mattiniera :-) e ci sarà un bel da fare tra rimettere in ordine la casa e smontare (con calma :-) tutte le decorazioni natalizie che ci hanno fatto compagnia per questo lungo periodo. Dicevo, giornata di completo relax oggi, anche perchè ieri ho cucinato abbastanza perchè avevamo amici ospiti, ed anche quasi tutti i ragazzi (con morose) e con l'occasione abbiamo anticipato di un giorno i festeggiamenti del compleanno di Michele (oggi 25 enne :-) e di Giorgia, la morosa di Dodo, che spegnerà le candeline ufficialmente domani.
Protagonista e motivo della cena era un maialino cotto nel forno a legna, intorno al quale sono ruotati antipasti e contorni a tema, quasi una piccola celebrazione della cucina tirolese: wurstel e leberkase con cetriolini speziati sottaceto, insalata di cavolo, kartoffelsalat, purè di mele (ma i dolci nella più classica tradizione italiana, anzi, di casa :-). Il maialino l'ho lasciato in salamoia per un giorno intero in acqua semidolce e speziata prendendo spunto da una ricetta natalizia di Nigella per il tacchino, poi l'ho cotto semplicemente nel forno con un po' di olio e bagnandolo spesso con la birra. Ho voluto preparare ance un ripieno a parte, che Nigella spesso accompagna al tacchino e riprende le spezie della marinata. Per farlo avevo bisogno del Gingerbread classico, una specie di pane dolce tipo plumcake ma speziato e molassoso, che ho cercato invano (ero a Milano venerdì e pensavo di trovarlo ma nisba). Ma tanta era la voglia di provare la ricetta di quel ripieno invitante (è pubblicata nel libro Feast) che ho fatto una rapida ricerca su internet e trovata la ricetta mi sono subito messa al lavoro :-).
La ricetta è semplicissima, di facile esecuzione, realizzabile senza l'aiuto di impastatori, mentre la torta è in forno nell'aria si sprigiona un profumo di spezie incredibile.
Le dosi sono in tazze e cucchiaini, e presa dalla foga non ho pensato di pesarle, anche perchè sono stata felicemente omaggiata da lei di pratici e simpatici dosatori made in Usa che non vedevo l'ora di usare e, nonostante le mie reticenze iniziali, si sono dimostrati formidabili, praticissimi e precisissimi :-).
Il pane dolce è venuto bene, ma ancora meglio il ripieno, prossimamente anche lui qui su questo blog.

Ingredienti:
  • 2  tazze di farina, setacciata prima di misurarla
  • 1/3 di tazza di zucchero bianco 
  • mezza tazza di burro sciolto
  • 1 cucchiaino di bicarbonato di sodio
  • mezzo cucchiaino  di lievito per dolci 
  • 1 uovo 
  • 1 tazza di melassa *  
  • 1 cucchiaino di cannella in polvere 
  • 1 cucchiaino e mezzo di zenzero in polvere 
  • mezzo cucchiaino di chiodi di garofano 
  • 1  cucchiaino di sale 
  • 1/4 di tazza di acqua calda
  • mezza tazza di latticello o latte acido ** (fatto con un cucchiaino di aceto in mezza tazza di latte)
* si trova facilmente in erboristeria o nei negozi di alimenti biologici tipo Naturasì 
** io avevo della panna acida e ne ho diluita un cucchiaio in mezza tazza di latte

Preriscaldare il forno a 180°.  
In una ciotola setacciare insieme la farina, lo zucchero, il sale, il lievito, il bicarbonato e le spezie. Incorporare mescolando con una forchetta il burro fuso, la melassa, l'uovo, il latticello.  Infine aggiungere l'acqua calda.  
Versare in uno stampo da plumcake rivestito di carta forno. Cuocere per 45/50 minuti.
Servire con panna montata o salsa di limone.

Old-Fashioned Gingerbread

Well, the long festive holidays are finally over, tomorrow everything will go back to the daily routine, boys back to school, husband to work and me... finally back to peace and quiet, with no one around except my cats, my garden, my lake. I will be busy anyway, have to tidy up after days of confusion and all Christmas decorations need to be undone and replaced in boxes and bags in the attic, ready for next year. 
Last night we had friends for dinner and baked a little pork in our wood fired oven (after an overnight marinate in sweet salted spiced water) and I wanted to bake als a special stuffing Nigella uses to make for the traditional Christmas turkey. But the recipe called for classic  Gingerbread and it was impossible to find it here.  So I had to do it on my own, a quick research on the web and my choice ended onto the Old-Fashioned Gingerbread recipe, I was attracted by the name but the result was then a nice surprise, easy and simple to make, no mixer required, an incredible spice aroma in the kitchen while in the oven. 
Ingredients are in cups and spoons (so confident for British and Americans but so unusual for us :-) but I worked it out easily and successfully as I was given long ago a very nice and useful (and heavenly suitable :-) red present from the States, so no anger and stress anymore for foreign cups&spoons recipes!
And soon, the recipe for the Gingerbread Stuffing, surprise number two :-), published in her book Feast.

You need:
  • 2 cups all-purpose flour, sifted before measuring
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 cup melted butter
  • 1 cup molasses
  • 1 egg
  • 1/2 cup buttermilk or sour milk (1 teaspoon vinegar and enough milk to make 1/2 cup)
  • 1/4 cup hot water

    Preheat oven to 350°/180°. Sift together the flour, sugar, salt, baking powder, baking soda, and spices. Stir in melted butter, molasses, egg, and buttermilk or sour milk. Beat in hot water. Pour batter into a generously greased and floured 8-inch square pan (I used a plum-cake mold lined with parchement paper). Bake for 45 to 50 minutes, until cake springs back when lightly touched with finger.
    Serve gingerbread with whipped cream or lemon sauce.

    Bread Baking Day # 45 Round up - la raccolta

    I have been hosting the last edition of 2011 Bread Baking Day,  a special Christmas Edition with Special Baking Presents as theme of the month. 
    First of all I would like to thank Zorra, our charming founder, who's carrying on this lovely event since July 2007 and gave me again the opportunity to host. Then I would like to thank all participants that found a little time to blog about their faboulous breads and special cakes even in these busy festive days: (and some  with more than one recipe! :-): I really appreciated and you made me  able to share a very smart round up! 

    Hope you happily said goodbye to 2011 and welcome the New Year with more enthusiasm and confidence: my best wishes for new joy, peace and prosperity and more and more bread baking fun!

    Sono stata la padrona di casa dell'ultimo Bread baking Day del 2011, una speciale edizione natalizia dove avevo scelto come tema  specialità da forno da regalare.
    Prima di tutto vorrei ringraziare Zorra, la fantastica creatrice di questo evento che viaggia on line dal luglio del 2007, e che ancora una volta è stata così gentile da darmi la possibilità di ospitare. E poi vorrei ringraziare tutto quanti voi che avete partecipato, che siete riusciti a trovare un pochino di tempo, così prezioso in questi giorni festivi così pieni di cose da fare, per condividere le vostre prelibatezze: ve ne sono veramente grata ed è tutto merito vostro se avete reso possibile questa gioiosa raccolta!

    Nadalin for BBD #45

    So ... 2011 has gone and here we are at the beginning of the new year, that someone claims to be the last of our life on earth ... but even though, then what can we or do we want to do? Better let us enjoy it as it is, perhaps hoping it's gonna be a little less messy than the past one, without making any long-term programs, or the usual long list of good intentions and must-do so hard to respect ... :-) ... just live in simplicity and fairness, trying to be a good example for our children and the people around us, being conscious that every morning (and evening) while brushing our teeth in the bathroom standing face-to-face to our reflected image (with no possibility of running away:-), we can always see a serene and satisfied person, in peace with her/himself and ... the rest of the world (almost :-). 
    Last night we spent a pleasant evening with friends, great food, sparkling chilled wine, cheerful chatter, the most beautiful lake than ever, an orange funny moon playing hide and seek between the clouds, fires and barrels at the very midnight bouncing from house to house, nearly a joint celebration to mark everybody's happiness that this turbulent 2011 was finally over! And after toasting to the New Year (enjoying our little private colored fireworks show :-) we were ready (and had enough space :-) for the desserts, including also my first Nadalin. 
    Nadalin is a classic Christmas cake from Verona, it is sold in many bakeries and pastry shops. It's supposed to be the father of the most famous Pandoro. It is 8-pointed star-shaped like Pandoro but lower and less leavened, usually sprinkled with pine nuts, but you can find some with raisins and candied fruit inside. Many legends and tales about its origins: it could be born at the end of  XIII century, to celebrate the nobles Della Scala that were awarded to be the Masters Rulers of Verona, or else it was a soldier of fortune belonging to the Lansquenets centurions that, homesickness and in a nostalgic mood, found some poor little ingredients and turn them in a star shaped comforting cake.
    Among the recipes on the net, I found this recipe by Emanuela and I followed because it seemed easy and fast enough (I read about a recipe with 4 doughs and 3 days of processing time but truly  I did not had time enough, though I would try) and then because she lives in Verona, so ... what better ambassador? 
    But I will also try to do my best to melt the hearts (and open their recipes book :-) to  a couple of local bakers, we are supposed to be friends so ... this will be a good opportunity to prove it! :-)
    This recipe has not completely satisfied me, unfortunately I have cooked a little more the cakes and their crust is not really soft as it should be, and yet I can feel the yeast too much, maybe it was important to have a second leavining time ... or might I be too exigent? :-)

    Sponge:

    100 g strong flour
    40 g fresh yeast
    80 g lukewarm water

    Mix all ingredients together and let stand covered in a warm place for half an hour or a little more.

    Dough:

    700 g srong flour
    100 g soft butter
    100 g sugar
    3 eggs
    1 egg yolk
    20 g honey (1 tablespoon)
    a pinch of salt
    flavors: vanilla or lemon/orange
    zest or rum
    about 200 g lukewarm milk
    raisins and candied fruit, optional *




    Icing:

    albumen
    hazelnuts, almonds, pine nuts
    granulated sugar


    * raisins should be soaked in warm water and then squeezed and dried with kitchen paper (I keep raisins in a jar with brandy so they are always ready for use), you can chop candied fruit if you do not like their texture but like their flavor

    - Pour flour and sugar in the bowl of your stand mixer, turn it on at low speed  and start adding the milk little by little, then add aromas, beaten eggs, butter, honey, the sponge in litle pieces, and finally the salt. 
    - Work at medium speed for about 10 minutes until the dough is well strung on the hook. Transfer to the working surface and beating and knead a few minutes  by hand.
     - Place the dough into a bowl, cover with plastic wrap and let stand at room temperature (but not very hot) all night, (I left in the pantry where the temperature is about 18°, no heating in it). 
    - The next morning, divide the dough:  in half for two cakes about 750 gr each, or in 3 for about 500 g cakes (you can also decide for smaller cakes, it's up to you :-). Shape into balls, place on a baking tray lined up with parchement paer, cover and let rise in a warm place about an hour. With a sharp knife or razor blade  make 2 vertical deep cuts and 2 horizontal perpendicular to the first ones to divide the ball into 9 small areas. Then gently pull out the 8 exterior parts to give the cake a star shape (if you like to avoid this step, you can put the dough directly in a star shaped paper mold, but original Nadalin are star shaped by hand).
     - Cover the cakes and let rise half an hour (I didn't do but then realized it would have been better) and then gently brush the surface with beaten egg white and sprinkle with chopped almonds/hazelnuts and pine nuts and drizzle with couple of tablespoons of sugar. 
    - Bake at 180° for about 20/25/30 minutes, depending on the size of thecake (place a pot with water to humidify the oven while it warms up, then remove it when you bake the cakes). If they get colored too quickly cover with aluminum.
     - Just out of the oven sprinkle generously with icing sugar. Delicious with mascarpone cream.

    Ed eccoci arrivati all'inizio del nuovo anno, che qualcuno vuol farci pesare come l'ultimo della nostra vita terrena ... ma se anche fosse, che ci possiamo/vogliamo fare? Godiamocelo così come viene, augurandoci magari che possa essere almeno un pochino meno ingarbugliato di quello passato, senza fare tanti programmi a lungo termine, o l'eterna e lunga lista dei buoni propositi così poi difficili da mantenere :-) ... viviamo in semplicità e correttezza, cercando di essere un buon esempio per i nostri figli e le persone che ci circondano, con la certezza che ogni matttina (e sera) quando in bagno ci laviamo i denti e siamo a tu per tu con la nostra immagine riflessa (senza possibilità di scampo e sotterfugi :-), possiamo sempre vedere una persona serena e soddisfatta, in pace con se stessa e ... il resto del mondo (o quasi :-).
    Ieri sera abbiamo trascorso una piacevole serata in compagnia di amici, con ottimo cibo, bollicine sfarzose, chiacchiere allegre, il lago più bello e limpido che mai, una luna arancione di sghimbescio che sembrava facesse l'occhiolino dalle nuvole, fuochi e botti allo scadere della mezzanotte che rimbalzavano non solo da un paese all'altro ma da casa in casa, una festa comune quasi a scandire la felicità che questo turbolento 2011 fosse finalmente finito!
    E dopo aver brindato (ed ammirato anche il nostro piccolo show pirotecnico che Michele ci aveva riservato :-) ci siamo dedicati ai dolci, fra i quali anche la mia prima prova del Nadalin.
    Il Nadalin (in dialetto vorrebbe dire piccolo Natale) è un classico dolce natalizio veronese, lo si trova in vendita in moltissime panetterie e pasticcerie artigianali. Si mormora che sia il progenitore del più famoso Pandoro. Più basso e meno lievitato, è comunque a forma di stella a 8 punte e generalmente cosparso di pinoli, lo si può trovare al naturale o con uvetta e canditi. La sua vera origine lascia spazio a leggende fantasiose: potrebbe essere nato alla fine del '200, quando i nobili Della Scala furono insigniti a Signori di Verona e celebrare così la loro investitura in occasione del Natale, ma si racconta anche che l'idea fosse nata ad un soldato di ventura appartenente alle centurie dei Lanzichenecchi che,  preso dalla nostalgia, si consolò con ingredienti di fortuna trasformandoli in un dolce a forma di stella.
    Fra le ricette presenti in rete, ho trovato questa ricetta di Emanuela su Cookaround  che ho seguito perchè mi sembrava facile e abbastanza veloce (ne parlano anche di una con 4 riimpasti e 3 giorni di lavorazione ma non avevo materialmente il tempo, anche se mi piacerebbe provare) e poi perchè anche lei è di Verona, quindi, quale migliore ambasciatrice? 
    Ed in attesa che faccia gli occhi dolci abbastanza da sciogliere gli animi (ed aprire i loro ricettari) a due cari amici fornai locali (ma fra poco, a feste finite, potrei anche avere successo :-), vi lascio con questa versione che mi ha quasi soddisfatto appieno, purtroppo li ho cotti quel pelino in più che la crosta non è rimasta propriamente soffice, e probabilmente era necessaria un'ulteriore lievitazione perchè sento un pochino il gusto del lievito ... ma forse sono io ad essere troppo esigente?

    Per la biga:

    100 g di farina 00 *
    40 g di lievito di birra
    80 g di acqua

    * non avevo altra farina in casa, ma sarebbe meglio usare per questa preparazione una farina di forza

    Amalgamare bene gli ingredienti insieme e lasciar riposare mezzora o poco più in luogo caldo.

    Impasto:

    700 g di farina 00 (meglio se di forza)
    100 g di burro morbido
    100 g di zucchero
    3 uova intere
    1 tuorlo
    20 gr di miele (1 cucchiaio)
    un pizzico di sale
    aromi preferiti: vaniglia o buccia di limone/arancio o rhum
    200 g circa di latte tiepido
    uvetta e canditi, facoltativi *

    Per la glassa:

    albume
    nocciole, mandorle, pinoli
    zucchero semolato

    * l'uvetta va ammollata in acqua tiepida e poi strizzata e tamponata con scottex (io la tengo in un vasetto con la grappa così è sempre pronta all'uso), i canditi si possono tritare se non piace la loro consistenza sotto i denti

    - Nella ciotola dell'impastatrice mettere la farina e lo zucchero, iniziare ad impastare a velocità bassa aggiungendo il latte a filo, poi gli aromi scelti, le uova sbattute, il burro, il miele, la biga poca alla volta ed alla fine il sale. 
    - Lavorare bene a velocità media finchè l'impasto si incorda bene al gancio. Trasferire sul piano di lavoro e battere e menare l'impasto qualce minuto a mano.
    - Trasferire in una ciotola capiente, coprire con pellicola e lasciare riposare tutta notte a temperatura ambiente, ma non in un luogo caldissimo (l'ho lasciato in dispensa dove non ho il riscaldamento ma è comunque un ambiente sui 18°).
    - La mattina seguente dividere l'impasto: a metà per due dolci da circa 750 g, oppure in 3 per dolci da 500 g (si possono fare anche altri divisioni e più piccoli da regalare).  Fare una palla con ogni pezzo di impasto e disporla su una teglia da forno ricoperta di carta forno, coprire a campana e lasciare lievitare quasi un'ora in ambiente caldo. Con un bisturi o una lametta tagliente (quella da barba) fare 2 profonde incisioni verticali ed altre 2 orizzontali perpendicolari alle prime in modo da dividere la palla in 9 piccoli settori. Poi con delicatezza tirare verso l'esterno le 8 parti esterne per dare al dolce una forma a stella (volendo evitare questo passaggio si può mettere l'impasto direttamente nello stampo di carta a forma di stella, mai veri Nadalin artigianali sono fatti formando la stella a mano).
    - Lasciare lievitare a campana ancora mezzora (io non l'ho fatto ma penso sarebbe stato meglio) quindi pennellare delicatamente a superficie con l'albume sbattuto e cospargere con mandorle/nocciole tritate e pinoli e un paio di cucchiai di zucchero.
    - Infornare a 180° per circa 20/25/30 minuti, dipende dalla grandezza dei dolci (m,entre il forno si scalda lasciare un pentolino con acqua in modo da umidificare l'ambiente, poi toglierlo quando si inforna o a metà cottura). Se colorano troppo in fretta coprire con dell'alluminio.
    - Appena usciti dal forno cospargere abbondantemente di zucchero a velo. L'accompagnamento più classico con della crema di mascarpone.
